Diet Advice – Healthy Quinoa Salad

For my lunch and dinner I prefer light meals that are easy and fast to prepare. This cold salad is one of my favorite recipes. It is a very light meal with an exotic taste, loaded with protein and vitamins. These are the ingredients that you will need to make the salad: quinoa, grilled chicken breasts, celery, crunchy apples, grapes, onion, curry, turmeric, brown sugar, olive oil, salt and lime juice. 

I started to cook with quinoa grain because it’s light, easy to digest, full of high quality protein and you can use to for deserts, soups, salads or any other recipe you can think of. Quinoa has many health benefits. It is a good source of magnesium, and since low dietary levels of magnesium are connected to increased rates of hypertension, heart disease and heart arrhythmia’s, quinoa can provide a boost to your cardiovascular health. Quinoa is also loaded with the amino acid lysine which is a key component for tissue growth and repair. 

Turmeric also known as Haldi, is a spice that is widely used in India. It has a long list of health benefits that includes being a natural liver detoxifier, and potentially being able to help with fat metabolism and weight management. I hope you will enjoy this recipe.

    HI Think I will try quinoa, but I like to put the lime/lemon juice directly on to the onion that way it mellows the taste. Great site I love it.

    I love your website and all My children do too. The youngest being 9. They do the workouts with me. Your workouts really wake up the muscles. You mention somewhere you’ve changed some of your thoughts through learning. I’m just curious what your thoughts are on psyllium husk now. If they’ve changed or if you are still using that supplement. The only reason I ask is you only made the one video regarding psyllium and haven’t really mentioned it since. At least not that I’ve noted. I’ve bought it and have been using it based on your video. Wondering if you are using still too. Maybe if you are you could make another video noting all the benefits of the supplement. Also, a very important supplement for me is probiotics. The list is endless as far as benefits there.

      it is always nice to hear about kids being active, I used be a very active kid, always playing outside with other kids. We didn’t have computers and we got our first color tv set when I was 10, so I am really thankful for that. Anyways, I still use psyllium although not so often anymore since I discovered Salba and I like it more. The thing that I like about Salba is that it taste good, it’s filling too and I don’t need to drink tons of water in order to avoid constipation. The psyllium fills you up, but it doesn’t taste good and you have to drink a lots of water, otherwise you just get bloated.

  11. My diet is the hardest part for me, I start off well, I eat healthy but I think my portions are too big. I will eat oatmeal banana and soy milk for breakfast for lunch some kind of salad, sometimes with meat and sometimes with beans. Dinner I will have meat veggies and grains, I never eat fast food and for snack I eat fruit, and tips on portions and how to keep yourself from eating too much?

    Hi Zuzana,

    My mouth had been watering to try this recipe ever since you posted it back in July. I finally took the time out to go to my nearby health food store today. We just finished having it for dinner this evening. My husband and I loved it and so did our 3 children!! We will making this more often. It is a goal of mine to incorporate more Quinoa into our meals. We don’t eat chicken so we used a meat substitute and I ran out of apples but other than that I followed the recipe to a T!

    Hi Zuzana!

    This looks like another lovely recipe I must try. Just a few questions for you:
    1.) What health food stores do you recommend in downtown Toronto (I think you live here?). I am new to the area and have no idea what are the names of the good shops.
    2.) Taking time to eat has always been a HUGE issue for me. I eat so quickly because growing up my parents would make us eat fast or they would take our food away. I was wondering, especially when you eat such small portions and even if you try to distract yourself… how can I make a meal last for 15 minutes? If I ate that meal you have there, I would be done in 3 minutes no problem. Usually I am STARVING, so I gulp my meals down. Any other tips on how to make a small meal last 15-20 mins would be FABULOUS!

    I am getting SO inspired by you and Frederick. In the coming weeks I will completely overhaul my entire eating and fitness life! I just found out I have Candida Albicans overgrowth and this has been a battle my entire life. I am taking steps to eat as Yeast Free as I can and I hope this will help me lose weight as I battle 30-40lbs up and down all the time.

  20. So, I just came from making this recipe, with my own twist, and I adore it!
    What I did is I cooked the quinoa with spinach. From there, I made the sauce out of a spoonful of both tumeric and curry powder with a dash of grainy mustard and a spoon of honey. I thinned it with extra virgin olive oil until a smooth almost glue viscosity and added it to the hot quinoa. Then added the apple, onions, dried cranberries, dried cherries, sliced almonds and lean roast pork into the freshly cooked quinoa.
    Thank you for the inspiration for now I have many different ideas…that I cannot wait to try! Try my version and tell me what you think! Thank you again!

    hey Zuzana,
    holy crap thats a small portion, Im not sure i should make mine that small since im only 16 and I do cross country, track and soccer on top of my daily workout with you. I carry granola bars with me and almond so i dont get hungry and I drink fruit smoothies almost every day. my fruit smoothies are all fruit and 100% orange juice is used, they give me more energy and they are yummy! but anyway do you agree that I should have a bigger portion size?

    And I am thin! (Not as much as you.. 18% BF)
    How can I start eating less without starving? I also eat 5/6 times a day, but lunch and dinner I always eat 4 or 5 times that portion! I would like to eat less but I starve to death! How can I change that??

    Wow! Ure lucky to have a job like urs where you can manage your meal times ie 6-8 times a day. But for regular peeps like us we can’t eat that small of a size and take 6 breaks in a day. I’m a dental surgeon and If I were to take breaks every surgery, patients won’t be too happy. Lol!! But I guess what I’m saying is that meals should depend on every individual and also their priorities! What matters is that your happy inside out despite the insecurities… As they say nobody is purrrfect!

    • Hi Aireen,

      you can’t even have an apple or handful of almonds during the day? It’s harder to keep the portions small this way and keep your metabolism at a high rate, but it is possible. If you have a fridge at work, you can prepare a smoothie for yourself and add some salba in it. It should last all day in the fridge and all you have to do is drink one glass of it every once in a while. My mom in law is also very busy lady who doesn’t have time to eat at work, and I got this idea about the smoothie from her.

        That is a great idea! Would you mind sharing a smoothie recipe that you use?

        Also, I am a vegetarian, and I am trying to focus on a more balanced diet that incorporates protein while still trying to eat clean (because a lot of the protein that I get is from frozen veggie burgers of sorts or related products that contain quite a bit of sodium and other ingredients that would not make them very “clean”). Do you happen to have any ideas for that?
