Diet Advice – Vegetarian Chickpeas Salad

I love this salad because it surprised me with it’s exotic flavor, even tho the recipe is very simple, and this cold dish takes no time at all to prepare. Vegetarian or not you will love it. It is a light meal and a perfect example of clean eating. The chickpeas are full of protein and their soft texture contrast nicely with the crunchy apples, onions, cucumbers and lettuce. Don’t forget about the tomatoes – they can’t be missing from this recipe. If you are planning on incorporating salads into your meal plan, it’s a really good idea to have  a few basic ingredients on hand to make dressings: olive oil, balsamic vinegar, lime juice and brown sugar (I am using natural cane sugar). The dressing is super easy to whip together. Mix each of these ingredients to taste – don’t be afraid to experiment the quantities of each ingredient. Just a word of caution since this is a fitness site – one level spoon of sugar is enough! What made this recipe special for me is the cumin. The smell of the spice  gives this salad a mouth watering flavor that actually activates the saliva glands in your mouth, which in turn helps with digestion. This Moroccan spice has many other health benefits including helping to boost your immune system and potentially increasing the body’s metabolic rate.

Enjoy the salad!

Can you please give us some snack suggestions too, what do you usually eat beetween main meals, just fruit or sth else???
    thank you

  • Andreas. V

    Wow, beautiful!
I really appreciate the vegetarian recipes, I was wanting to find a way to use the chickpeas I had over from attempting to make hummus.

    Thank you!

Looks great! Is that dried basil you use? If so, try it with fresh-you will LOVE the fresh flavor and even fresh mint would be fab in this sald! Also–for people new to chickpeas (or any canned beans) make sure you drain and rinse the beans really well–this rids of a lot of sodium and grit. Thanks for a great recipe, Zuzana–trying this one today!

  • Natram

Thank you that was awesome!!!…..yeah i agree with Luci..some snack ideas :) Have a great weekend.!

  • Viviana

Thank you for this healthy, yet simple recipe. I love cumin, too. Thank you also for showing your portion sizes. That’s important because sometimes we think that just because we are making a “clean” dish, we can eat huge amounts, and this sabotages our diet.
I wanted to ask, what do you usually eat as pre and post workout meals? Thanks.

  • valentina

hi zuzana! can you help me with a recepie off high protein drink! i bought a protein powder but luckely i did’t taste it because i read your article about those things and how bad are for the body!
thank you very much for all the interesting and helpfull things you are sharing with us!

    Zuzana~
Thanks for the great recipe! that looks delicious! I have to try soon!!!
By the way, is there anyway you can show us what you would eat for one day?? I try to eat 5-6 times a day small portions. It is working out great!! However, it is hard for me to balance out how much i eat….would you consider one apple with some peanut butter as one meal??? and can you give us some tips on healthy snacks??
    Thanks!!!

Hi Z! I don’t know if you’ve heard of Yerba Mate, a natural herbal tea from S.America. I know that you love coffee and probably drink it to help with digestion and the energy boost. I wanted to tell you that Y.Mate is really good for energy levels, and instead of caffeine it contains something called Mateine (also non-addictive). It’s cool because it doesn’t make you crash later on. Many people like to sweeten it, and when I do–I use mostly Stevia extract. It’s really good to drink just when you sit to read, have company at home, etc., just like S. Americans do traditionally. :) It’s not only healthy for you, but it also has a pleasurable taste–but it’s hard to describe. So in case you haven’t tried it yet, if you ever want to give it a shot, I will just tell you the materials you need right now. You need a wooden gourd (the cup you put the Mate leaves into, which looks like a goblet), the metal filter straw, and of course the herb. I think you can get good ones online. Many people who start drinking it ease into it with the brand “Guayaki”. Love, and take care!

ps: BTW, I think many diet supplements out there supposedly contain Y.Mate, but the natural form is definitely good stuff–not unhealthy. :>

Thanks so much I finally tried this recipe today. It is a really great recipe. I thought I would really miss having meat on the salad, but it was very good and filling.

I would love to also see what your 6 meals consist of in a day. I got the one had two hands thing but I am still confused if every meal should be that size…even snacks.

    Thanks again great recipe!!!!!!!!

I didn’t hear what the blue little bag was that you put into the dressing. “Basraleaves” or something. Please tell me Zuza. Cheers. I’m four days into your diet, and I feel like a new person already. Vegetarian is really an interesting alternative. What do you think about soybeans? I heard they compliment proteins that you cannot get from pasta/bulgur/quinoa.

MMMMM! I Tried this salad today! But I left out the apple and made it with crunchy prawns and added some cayenne pepper to the dressing for some spicyness. Was so delicious!!! ;) P.s- You were right about the cumin, it just makes the salad!

  • SallyF

    Excellent, thanks

  • Maryam

honey tastes really good too in the dressing instead of brown sugar.

    hi Zuzana,
i just have one question, i’m french and to be honest i like to eat something sweet after my meal. like a fruit or a dessert. what can i do to keep the portion size small but still enjoy my dessert?

    best

  • http://www.bodyrock.tv/ Zuzana – BodyRock.Tv

    Hi lisaG,

you have answered yourself basically :) just keep the portions of your meals and especially deserts small. I have been to France a lot and I didn’t notice that french women would have a problem keeping their portion sizes small. French women don’t seem to have problems with overweight either, although they do enjoy their incredibly tasty french pastries. I am surprised that french girl is asking me how to keep the portions small. I am sure that you must have women around you who could be a great example for you (if you live in France).

  • Alana

Will have this for lunch today hmmmm cant wait………

Thanks for all you two do and share…

I always buy and use romaine lettuce as it’s nutritious where iceberg lettuce is not.

I’m spending some time tonight copying down some of your recipes. I need some different things to eat that are both good and nutritious. I’ve got to get back to eating better. Thanks…

    All the best,
    Scarlett/kittyred
