Recipe – Thai Mango And White Bean Pasta

I love my aunt’s kitchen. It’s so nice and perfectly organized. You don’t  have to spend any time looking for things like a can opener, feather brush, strainer, spices, or a chopping board. Another great thing about her kitchen is that it’s perfectly stocked with a wide and exotic variety of ingredients. Every spice, sauce, oil or seasoning that you can find in those fancy kitchen boutiques is in her kitchen – and she knows how to use these ingredients in her meals like nobody else. Cooking is so much more fun when you can open the cupboard and discover a new spice or flavor that you have never tried before. It’s always so exciting when she invites us for home cooked dinner at her home – way more exciting then going to my favorite restaurant, because her meals are not only delicious but also healthy. Her cooking has inspired me to experiment with different recipes, and when a dish turns out to be a success I like to share it here on BodyRock.Tv.

This recipe is relatively simple to put together. You will need the following ingredients:

- 375 grams of whole wheat pasta

- 1 cup of sliced grape or cherry tomatoes

- 1 Thai Mango

- 1/4 cup of fresh chopped Oregano

- 3 cloves of Garlic

- Sea Salt (to taste)

- 1/2 table spoon of Balsamic Vinegar

- 1/2 can of white Kidney Beans

- 1 table spoon of freshly graded Parmesan Cheese

I served the pasta on a bed of fresh mixed greens.

    I know what I’m having for dinner! I believe I have tried nearly every recipe you’ve posted, Zuzana! There isn’t one that I haven’t liked yet, so I can’t wait to give this one a try. I like the simplicity of it (i’ve got everything in my kitchen right now!) & at the same time seems exotic because of the ingredients you’ve combined.

    Hey, Zuzana!
    Just a tiny little suggestion… :) I´ve heard that it isn´t good to expose olive oil to high temperatures. I use cocos fat and palm oil for baking, preparing sauces, etc.

    Bon apetit! Whole wheat pasta is great; thanks for this unusual, simple recipe.

    By the way, I recommend a ‘microplane grater’ to make a little Parmesan go a long way. It creates feathery wisps of cheese that spread out easily (and works for garlic, ginger, zest, nuts and chocolate, too).

    Also, I appreciate the way your videos show ‘real life’ healthy living, from exercise to cooking. You inspire me to incorporate little changes into my life *now*, instead of waiting for huge changes (that I’ll never get to).

    The little changes feel great!

    The Lamutka, are you sure about olive oil? What I heard was that butter is cancerigenous when exposed to high temperatures for more than a few seconds. I didn’t knew that it was dangerous doing the same thing with olive oil. Why?

    Hi Zuzana… awesome recipe, will definitely try it!

    I was reading in a magazine that when cooking with fresh herbs you should actually use kitchen scissors to cut them rather than a knife to chop them as the knife will bruise them. not sure how that affects the flavor, but just a suggestion I suppose… seems a bit easier to cut them with scissors anyway, i’m gonna start doing this to avoid having to clean the little green bits off the cutting board! :)

    By the way this is a very good and healthy recipe. The only thing i would ad is chopped red onions. Here in Serbia we use red onions alot in all kind of foods. It is god for cooking and also it is god as raw in salads. Especially combined with beans.

    Yum! I like to buy the mangos when theyre on sale 3/$1 or so, chop them up & freeze for after-workout protein shakes. I haven’t thought of using them in pasta but it looks really good. Tonight I am having bbq wheat roast over quinoa with mixed grilled broccoli/peppers/onion/garlic/mushroom=) It is quick because I have frozen some chopped mushrooms and I make a large pot of quinoa/bulghur/couscous at the beginning of the week to last.

    Hi,

    when you eat six small meals a day, do you usually eat different things each time or the same things. I don’t have ton of money so I am wondering if eating the same thing twice is okay. Also how much food to you eat at each mea? Is just an apple acceptable or does it need to be larger.

    i m having a hard time keeping in line with the diet. its not that i crave stuff or that i dont like the healthy food…i just have a hard time with the planning and knowing how much is okay. n like if i sleep in one day my “eating every 2-3 hrs” gets all messed up.

    could u plz take some time to write a post abt how u plan ahead n how u avoid messing up.

    First of all, I would just like to say thank you so much for the time and effort you have out into your website, it’s amazing! I’m 19 years old, and I started working out 5 times a week about 2 months ago. I have done a lot of searching around and experimenting with different fitness instructors’ routines until I came across yours. So far, I have tried the best 20 minute cardio workout, the ab torture workout, and this recipe. Ever since, I have been totally hooked on your advice about training and eating because it makes me feel good.

    While at a grocery store, I recently came across a fruit and energy bar called Elevate me!. I’m still fairly new to diet and nutrition. But, from what I can see, the ingredients seem to be very healthy. I like to eat one before I work out, and it gives me more drive to do my workouts with intensity. I was wondering if you have ever tried this product, or heard anything about it.

    I am glad that you are enjoying the site. I have never tried this particular kind of energy bar, and to be honest I tend to avoid this type of food because it is usually heavily processed and loaded with sugar. Take the time to really examine the labels.

    I have to say that I love this site and it has really inspired me to eat healthier and motivate me to lose weight. I tried a variation of this dish. I cooked whole wheat pasta, and I took chicken breast cut up into pieces, as the chicken started to turn white I added garlic, onion, celery, and tomato. I also added about 1/2 table spoon of balsamic vinegar, and a little parmesan cheese for flavor. It was delicious! Thank you for the inspiration for the recipe! (I cooked it in olive oil) =)
