Recipe For My Favorite Leek Soup

The leek soup is a healthier version of the leek soup that my mom used to make when I was a kid in Prague. This is basically the same recipe except that she would use white flour and butter. She would actually fry the flour in the butter. That would make the soup thicker and give it a very nice flavor, but that isn’t exactly the healthiest choice. I prefer to use the rolled oats to thicken the soup. The egg whites add a boost of protein and the little bit of skimmed milk gives it a creamy flavor. I am a huge fan of garlic, so I always add a few cloves at the end. This soup is really easy to make, is super inexpensive and takes only about 10 minutes to prepare. I usually make a huge pot and have it for a few meals over the course of a day or two. This soup fills you up without leaving you feeling heavy. You can experiment with the number of egg whites to boost the protein level. If you are trying to loose weight, then this soup is a great choice to incorporate into your diet.     Hope you feel better soon. Wisdom teeth are no fun – had both of mine out at 32 – lucky me only came with two so didn’t have to do more. The recovery was pretty easy overall so hoping that you feel well soon – what a shame to have all this happen in a new country before really settling in!

    Hi Zuzana!

    I just wanted to let you know that you can give the left over egg yolks to your dogs so that they are not wasted. :) The egg yolks are actually good for them and they make their coats shinny and healthy.

    I’ve never had leeks,but I’m going to try this one,because it looks so simple and delicious. Aaand, I have a recipe for you since I noticed you used oats….(1) Preheat skillet medium-med. high heat with EVO or if you prefer,you can use about 1-2 tablespoons of butter. (don’t let the butter burn) (2) Break into a small bowl, 3 egg whites, 3 handfulls of oats, add spices of 1 large grated garlic,pepper,cumin,and salt;stir till ALL the oats are coated. If ALL the oats don’t coat then add another egg white. (3)Pour mix into heated skillet and stir till you see the oats brown and the whole thing crumbles as you stir. This takes about 2-3 minutes. (4)Then, add water or broth (what ever flavor will do)just to level of oats. (5)Continue stirring till water evaporates. (6) ALL DONE!! Everytime I make this, my husband still does not believe its just oats. He prefers this over dressing. I hope you like it too.

    Could you maybe do a video of your day? (When you’re better) Like, show the times that you eat so we can see the frequency, and what time of day you include your usual work out? I think it would be really helpful. I’ve been trying to eat more frequently, but I always feel like I am not able to work out a schedule for myself. Also, is it really that important to always pair a complex carb with protein every time I eat for the “clean diet”?

    I have a funny story about Leaks, but it centers around a late summer night and chasing girls thru their father’s leak patch after swimming in the Hood Canal near a place called Holly.

    On your Leak soup it, sounds good and would be good for your recovery.

    I think mothers sometime have the best ideas. I don’t think a little butter in the diet is a bad thing and egg yokes hold most of the minerals and vitamin in an egg. Besides if you buy eggs with Omega 3 added then throw away the yoke you are wasting money as the Omega 3 was in the yoke. You don’t want to eat a lot of yokes in a week. But, a healthy active person can consume 5 or 6 with no problem or so I hear.

    I know someone mentioned you don’t like Hummus, but the other day I found a old copy of a recipe that I would like to pass on here for those who do like fresh Hummus.

    You soak a cup (about 8 oz) of Garbanzo beans (lighter colored ones) for two day in water then boil them for about a half an hour on a stove top. This should produce about 16 ounces of tender beans. Drain them well.

    Okay now you will need a blender or a food processor and these ingredients:

    -4 Cloves of Garlic chopped fine (more if you like)
    -16 ounces of Garbanzo beans (canned if you don’t want to deal with the cooking)
    -1/3 cup Tahini (roasted)
    -1/6 cup Lemon Juice (fresh squeezed is the best)
    -1.4 cup water (or some of the drain water from cooking the beans)
    -1/8 cup Olive Oil (extra virgin of course)
    -1/4 teaspoon salt (or to taste)

    Combined the Garbanzo beans, Garlic and Lemon Juice and mix till nearly smooth. Now add the water, Tahini, salt and Olive Oil and mix till smooth.

    I just today made some and it tastes great!

    I am starting again (after a longer break) with the Montignac eating plan. I wanted to ask if you ever read his books. I did loose a lot of weight with this program last time and felt really healthy also. I think it has a lot in common with the eat clean theory, so I wanted to mention it…

    Hi Mandy,

    I eat approximately every 2 hours. I have breakfast, lunch, dinner and snacks in between the main meals. I try not to eat after 8pm. I do my workouts in the morning about 1 hour after my breakfast. Eating protein with carbs in each meal helps to slow down the digestion, which in turn helps to keep your weight down.

    Hi Serena,

    I am 27 and my husband is 34. It got mixed up on the youtube channel and we can’t change it now. What I eat between the main courses is simple. Mostly fruit or salads, some yogurts and nuts. Nothing that exciting really :) Why are you scared to move? It’s exciting to travel and explore new places. Just do it, you will love it ;)

    Hi Zyzana i really hope ur fine.Well i have a few cuestion.When u says 3 or 5 pounds weight,what u means one of them or the both?
    Is it true,that the high interval cardio make¨s u a biggest muscules,than the loe impact cardio.I feel really confused becouse the trainer Tracy Anderson said ,that the low impact is the best for no build biggest muscules.
    Can i slim my calves?

    Hi Martinika,

    high intensity cardio burns more calories, boosts your metabolism and makes you stronger, while low intensity cardio promotes cardiovascular health and burns some calories but not much and only during the actual exercise. What will have impact on how big your muscles are is the amount of food that you eat. Eat more and you will have bigger muscles. Eat less and you will have small muscles. Exercise hard and you will look more cut. Exercise with low intensity and you will look softer. It is very simple.

    If something you made from Zuzana’s recipes doesn’t taste good maybe it’s the cook’s fault! 8-)

    To Zuzana; lately there is less drooling and more sympathy at YouTube for you. And actual a little good common sense advice. I didn’t see anything from a Normalton, but then only went back a couple weeks of comments and maybe he is using a different moniker there.

    Anyway, being human we all can improve and Frederick and Zuzana seem perfectly willing to take advice and improve from new knowledge. One reason I like them and their website.

    Thank you for this tasty recipe!!

    I will try this soup with a few modifications:
    -almond butter, instead of eggs (proteins but no cholesterol)
    -soy or almond milk (i find those milks are healthier than cow milk)
    -1 tsp of nutritional yeast for a “cheesy” taste and full of vitamins, proteins…

    I hope you are recovering well from the dental surgery. I remember having my wisdom teeth out and it wasn’t fun at all.

    I was wondering if you could tell me where you purchased your clubbells, and what weights they are? I see from one of your challenge workouts that you have 2.
    I live in Whitby Ontario Canada, and would love to buy a set and do some of your workouts with them! I would want the same weight that you use for your workouts.

    INGREDIENTS:
    1 cup finely chopped cooked chicken fillet
    1 teaspoon lemon juice
    ¾ teaspoon minced fresh dill or
    ¼ teaspoon dried dill weed
    ½ teaspoon salt (omit if on a salt free diet)
    1/8 teaspoon garlic powder
    Pinch white pepper
    2 cups plain fat free yogurt
    1 small cucumber, seeded and diced
    ¼ cup chopped celery
    3 tablespoons sliced green onions
    Fresh dill sprigs for garnish

    And finally :) Place the chicken with the lemon juice, minced dill, salt, garlic powder and pepper in small bowl and toss lightly.
    Cover and refrigerate for 30 minutes.
    Place yogurt in medium bowl. Stir with fork or wire whisk until smooth and creamy. Stir in the mixture of chicken with the mixture of cucumber, celery and onions into your whipped yogurt.

    Its reallyyyy nice soup. and very healthy, :) i hope you will enjoy :)

    Hi Zuzana,

    Came across your site when I was recently looking for inspiration for new workouts — I really enjoy the workouts. And that your Czech (my boyfriend is from Plzeň).

    Like the sounds of this recipe, yet to try it though.

    Not to be intrusive, but your site doesn’t have much of a profile on you or your husband — your backgrounds or how you got into fitness and such. Are you lucky enough where this is your main job, or do you each have outside careers and post for fun (and our benefit!!)? And the workouts you post — are those your only workouts you do personally during the week, or are you doing additional machine/weight workouts as well? Seeing that you are muscular (much more than simply “toned”), did you used to train more intensely?

    Best of luck with your continued site success, you certainly seem to have quite a few followers!

    the soup turned out very, very good; thank you!!! It’s so easy and delish, I’m going to make it a part of my weekly menu. Imagine that I used to eat those ramen instant noodle soups when I wanted something quick. It used to leave me bloated and then I learned that it was due to its high sodium content.
    I’m going to try your soup with some barley and/or shrimp.

    Hi Zuzana,

    first of all, hope you get well quickly, albeit I have to admit you do not look even remotely as hamster-like as I did after my wisdom teeth were removed :)
    The leek soup is delicious especially now that the cold season starts again (at least in central Europe). I blended all ingredients except for a few rings of leek cause I like it a bit smoother. Also I added 2 whole eggs cause as mentioned before most of the good stuff (incl. most of the protein) is contained in the yolk and honestly, this soup is already devoid of fat and few grams per serving do not hurt ;)
    I have another very delicious and healthy recipe for a very seasonal soup which we prepared for Halloween. Of course, it is pumpkin soup (any kind will do but also a mix of flesh is nice) and indeed it is very simple.

    Ingredients:
    1 medium sized pumpkin, chopped
    3 – 4 potatoes, diced
    1 onion, diced
    1 clove of garlic, finely minced
    about 1 L of organic vegetable stock (just covering the vegetables)

    Take a few pumpkin and potato wedges aside, grill them in the oven while you cook all the other ingredients in a large pot until potatoes are a bit soft (15 min).
    Blend the vegetables and add

    1 glass of organic orange juice (or freshly squeezed)
    1 piece of ginger, finely minced
    1 table spoon of curry
    salt, pepper and chili to taste

    Simmer for 5 min. In the meantime roast a handful of pumpkin seeds in a pan.
    Add the grilled wedges to the blended soup and top your bowl with pumpkin seeds, low fat yoghurt and/or pumpkin oil according to your taste.

    A nice side effect is of course that if you hollow out the pumpkin with a spoon you can cut a scary Halloween face into the peel and light it with a tea candle from the inside. Happy Halloween!

    Interesting soup, wierd with eggs in it ! ;)
    Try soaking a mixture of barley, lentils and split peas in water overnight…add this to your leeks as the base for soup. It makes really thick Scotch broth, with endless variations… Dobrou chut!

    Yesterdays workout was harsh! especially after spending a few weeks in Czech eating too much bramboraky ;)

    I’ve just tried your leek soup and it is delicious, I couldn’t believe, thanks for sharing!
    I have a recipe for you and a question.
    Recipe:
    1 kg pumpkin, diced
    1/2 or 1 leek, according to your taste, sliced
    Put the vegetable into a pot, cover with water (not to much if you want your soup thick, the vegetables reliese a lot of water from themselves), add a pinch of salt and let it cook until the veggies are done. Then blend everything with a hand mixer to have a cream. Put in your plate, ground some fresh pepper, if you want you can add some cubes of cheese, let them melt for few seconds and enjoy!

    Question:
    I’m 168 cm tall and my weight is 53 kg. I’m fit, I exercise regularly at the gym. my concern are my muscles: they are shaped and toned, especially in my upper body (I have to concentrate more on my abs and butt, thanks for your last video!)the problem is how can I maintain them the way they are! I mean, I’m afraid them can become bigger and I don’t want. You said that muscles become bigger if you feed them: what is the perfect balance of nutrients in order not to develop you muscles?

    I was skeptical but had all the ingredients and thought I’d give it a try. SO YUMMY! I’ve made it a couple times now :). I’ve found spinach to be a great addition. I’ve tried it without the oats and and missed them.
