Hi everyone!

I hope that you are enjoying today’s active rest. I wanted to share with you this recipe for some time already, but I am glad that I couldn’t do it earlier, because I have improved the breakfast cake a little bit over time. The great thing about this recipe is that you will need only a handful of very common ingredients plus it is very easy to prepare. We have this cake very often for breakfast and we have it sometimes in the afternoons with tea as well. I noticed how happier I am since I started to look at food as a joy instead of just a fuel. I don’t care about the ratios of macronutrients in my meals and I feel more relaxed and free. You have no idea how much I am enjoying cooking and eating right now. Every meal should be special and I believe that we should start our days with nice food that we enjoy. Eating is one of the most enjoyable things that our physical body allows us to experience and we shouldn’t take these moments or experiences for granted.

Take one cup of whole wheat couscous and cook it. Once cooked put the couscous in an oven safe bowl.

Add two handfuls of rolled oats.

Pour about one cup of milk over the couscous and oats.

Make sure that it has a thick consistency. If you think that the mixture isn’t thick enough, you can always add more oats.

Grate a skinned carrot on the smallest grating surface so that you get a fine pulp.

Peel two apples and grate them on the largest grating surface. Mix everything together.

Cover the surface of the mixture liberally with fine ground cinnamon.

Sprinkle the surface with one handful of crushed walnuts.

Drizzle a generous amount of honey over the surface. Remember that the more honey you add the sweeter the cake will be. I like to add a lot :) In general, if you cover the surface with a thin layer it should be enough. Mix everything together well.

Crack two or three eggs (depending on how many you have in the fridge) and whisk them. Cover the whole surface area with the eggs.

This is what it looks like right before you stick it in the oven.

Put it in the preheated owen at 230° C. Don’t cover it. Let it bake for about 25 minutes until you see that the eggs on the top are cooked.  To see what it looks like when it’s done, watch the video above :) To taste it, make your own!

    Hi Zuzana,

    Tried making your cake. It was pretty tasty. But, I can see it being made the night before and cooled in the Frig for breakfasts. Also, I have a tip. If you quarter and core the segments of an apple you can grate it to the skin. To me this is simpler than pealing the skin off an apple and grating it to the core.

    mmmm~~~~! This was so good and to feel not guilty after eating a cake is awesome!
    I used soy milk and agave nectar and it turned out ok.. i got confused with the oven times but it cooked well..
    Im eating it right now! hehe.. I actually put a slice in a bowl and put soy milk with a little bit of granola and salba.. so its kind of like oatmeal/cereal/cake all at once.. deee-licious!

    Yummy. I agree, very good when it’s cold. Kind of like bread pudding and good with milk poured over it.

    What kind of milk did you use? I only had skim milk.

    I added some shredded coconut to mine and it was delicious!

    I think next time I’ll add some mashed bananas because I always have some over-ripe ones in my fruit bowl.

  6. Here is my Raw Vegan version of your cake:

    Just replace the following, keep the non-mentioned ingredients:

    - cooked couscous –> shredded coconut
    - rolled oats –> soaked groat oats
    - milk –> raw almond milk (or simply filtered water)
    - honey –> dates
    - eggs –> raw extra-virgin coconut oil

    Also add some sea salt for extra trace minerals and enhancement of flavor.

    Instead of baking, simply process the mixture in a food processor and serve right away!

    This is a much easier, quicker and healthier way of eating your cake :) There is no baking involved, keeping the nutritional content of the foods intact. Also, vegan meals are always more efficient to digest and do not clog the insides of your body.

      All of the ingredients in this cake recipe is very healthy. I disagree that vegan is way of eating is any healthier.

    I made it, and I loved it :) The whole house was filled with the sweet pleasant aroma, hmmmm makes you want to wake up. I cannot believe that healthy and delicouse can be put in one sentence, but so far I tried few of your recepies and they are delicouse! I loved the tuna pasta salad the homemade dressing really gives a speacial edge. I am a freak by nature and I actually calculated total grams of fat sugar protein fiber and calories, it took me a while but I wanted to be very accurate so the recepi is the same exapt minor changes
    instead if milk I used Vanilla Soy milk from trader joe and i used to be presise 1 cup of rolled oats. I dont have the notes with me but the total calories and fat content i remembered
    so 1/10 serving size would be 115 calories 3.6 grams of fat and I believe 6 g of fiber I will post tomorow exact info
    again it was deliciouse and the smell my my my never knew something could smell so good

    Hi Zuzana,
    First off, love everything on here including you and your videos! =)
    I was writing to request that you add more recipes?? If you could, that would be great!
    Also, maybe you’ve already cleared this up somewhere (I’m fairly new to the site still) but I see that one of your posts state that you eat 5-6 times a day and another one states 6-8… Could you clear this up for me? If you eat 6-8, how many of those would be more like a snack (ie apple, yogurt, etc.)?

    That is a nice version, RawFreedom, but it’s not a good idea to eat oats raw or just soaked.

    It’s a grain and requires cooking, otherwise it will digest poorly. Only birds really can eat grains in their natural state.

    I would keep the honey too (raw and organic) instead of or in addition to the dates, since it’ll help digest the carbohydrates in the oats and provide an extra pop of enzymes (protein) and Vitamin C.

    I tried this at home. I used whatever couscous I could find + quick cook oats.
    Sliced almonds instead of the walnuts. I used Agave instead of honey…made sure to use a lot so it’s as sweet as I wanted it to be.

    Anyway it came out great. Coulda used more Agave tho but I solved that problem by topping eat slice with Nutella.

    Next time I’ll add 1-2tablespoon of flour.

    Did anyone experience this after eating this delicious cake? I found that eating this for breakfast with a glass of lactaid milk left me feeling full and when 2 hours had passed and was time for me to have a small portion snack,I wasn’t even hungry for it. Wasn’t hungry for several hours till 4pm. I’m going to make another one accept this time I’ll try it with brown rice. P.S., It was even better warmed in the microwave topped with banana slices.

    Just wanted to let you know, I have wanted to make this, or have the wife make it, since you posted. I just got done making it, and yes I did it because the wife and my daughter went shopping, and it turned out great. Thanks a lot it will go great with my espresso in the mornings.

    Hi Z&F!

    I made this today, I did change a couple things, I didn’t use walnuts, not a big fan of nuts in my food, I just don’t like the consistency, I’d rather just eat them seperately, and I made them as muffins. They were SUPER GOOD! My hubby really liked them, too. He did say they are a little too carroty, which I agree, I’m not a big fan of carrots either so next time I think I’ll add a half of a carrot instead of a whole one. We were both happily surprised at how good this is. Thank you for the awesome recipe, keep ém commin’ :) !!!!

    OMG I just made your cake this morning and it was definitely nummy in my tummy! I’ll be working out in an 30min, and I wouldn’t doubt, post workout, i’ll be having a small slice again with my salad! ^o^ I was also thinking, this recipe tastes like it would pair great with maybe 1/2 a handful of raisins? I will try that out next time I make this delightful little cake! Thanks!

    From a nutritional point of view, edible skins of fruits and vegetables should not be removed. Most of the minerals and vitamins are found on and just under the skin. And if you are cooking them anyway, they become soft. So, please don’t remove them!

    I tried just cutting the apples in quarters and grating them, I don’t think that was easier than just peeling them. I also didn’t read correctly and set the oven to 230 degrees F! I couldn’t figure out why the cake wasn’t getting done! ARRGGHHH! I finally came back on here and figured out what I was doing wrong and it cooked through. It as worth the wait, I think it is delicious! THANKS!

    OK, I made it. It’s pretty tasty! I used two egg whites and one whole egg and added pumpkin pie spice and organic raisins to the mix. I actually like the egg on top. It cooks up and you don’t really see it as egg but as a glossy top to the “cake.” It’s a good base that will work with a whole lot of different variations. I look forward to reading what others may come up with. Good job, Zuzana! Thanks for sharing.

  40. Just popped the breakfast cake in the over (425F). I used pecans (out of walnuts) and substituted 1 cup cooked oats for the couscous, kefir for the milk and a second carrot for the apple (dietary restrictions). I also used agave nectar rather than the honey.

    Can’t wait to taste it.

    Hey all, may I just say that I’m totally obsessed with this cake! I made it few days ago and we’ve been having a piece each with my fiancee for breakfast or afternoon treat every day.

    I substituted the honey for dark molasses and a bit of brown sugar, used 1 apple and 2 carrots and added plenty of natural vanilla essence. I used mixed walnuts and pecans too. Mine didn’t look like Zuzana’s at all once I poured the egg mixture on top, it did look much ‘drier’. Anyhow, it turned out really yummy. I did cooked it for a bit longer though.

    Cheers guys, I’m trying this again tomorrow but I might try to use roasted buckwheat groats instead of the oats!

    Thanks for the recipe! I didn’t have cous cous ( though it’s on my shopping list for next time) so I used cooked quinoa and it was still great! i’m going to add this to my breakfast rotation.
    ..normally I par-cook a bunch of seasonal veggies and keep them in the fridge so that in the morning i can toss a handful into a skillet with an egg or two for a veggie scramble or fritata. I eat it with a slice of homemade (5 ingredient!) whole wheat bread (thank goodness for bread machines) with a little butter and honey. If i’m headed out for a long run (2 or more hours) i’ll have a extra slice of bread…so maybe now on long run days i’ll substitute your cake… I’ll try it and letcha know how it goes!

    This was good! I added an egg to the cous cous/oatmeal batter as I wasn’t sure it would hold together once cooked.

    Also, the oven temp should be 350 degrees (not 230). I cooked the cake at 230 for 25 min and it was still soupy!

    Anyway, nice cake for a Sunday breakfast ~ I liked it very much :-)
