Diet Vegetable Soup Recipe

I know that this recipe might not sound really exciting or new, but the reason that I am sharing it is that I often like to cook simple meals made from of few simple ingredients. This soup is light, easy to prepare and delicious. If you are on a mission to lose some extra weight, then vegetable soups like this one can come in very hand – especially if you are pressed for time. Here are the ingredients:

1 large onion

5 shallots

1 leek

4 stalks of celery

2 large potatoes

2 handfulls of chopped mushrooms

1 handful of chopped baby carrots

1 table spoon of olive oil

Chop all of the ingredients into a large pot with water. Add a spoon of olive oil, 1/2 teaspoon of oregano, 1/2 teaspoon of basil, 1/2 teaspoon of rosemary and a little bit of salt. When the vegetable is cooked, mix in about 2 to 3 handfuls of rolled oats (depending on how thick you like your soup), 3 to 4 egg whites, and the last ingredient is garlic – one of my most favourite ingredients:) I used 4 cloves to make this pot. It is important to test the flavour frequently and add the spices according to your own taste.

    This actually looks very yummy and I would recommend for a variation to use chicken broth or chicken stock instead of water just for flavor and also adding some oregano leaves will add another great flavor :)

    i love soup! and tins looks tasty, zuu do you still keep the 1 2 3 diet? 1 fat, 2 protein, 3 carbs in your diet? or now that you are vegetarian think different?

    the size of your portion vegetarian diet is bigger than the meat portion?

    what do you eat on the breakfast now?, just fruits?

    when do you eat wheat bread now?,

    how is now the size of the salad postion?,

    what happen with milk? are you drinking soy milk now?

    This is a great recipe. The problem is it’s so hot outside that most people don’t really wanna eat soups during summertime. I am going to clean out the fridge tommorow and make either this or some variation of it.

    Yumm thanks for the recipe. The only things that I think I will change is using veggie broth instead of water and quinoa instead of the egg because I really don’t like the taste or texture of eggs.

    I have a good recipe that I like to make quite often. I love to cook and I have a ton of great recipes I would love to share, but I never know which way is best to share them with Zuzana.

    black bean salsa:
    2 (15-ounce)cans of black beans (i prefer no sodium added)
    1 (17 ounce)frozen whole kernel corn thawed
    3 large tomatoes chopped small cubes (no seeds)
    2 large avocados (more if you like)
    1-2 onions diced, same size as tomatoes
    1/4 cup of chopped fresh cilantro leaves
    4 tablespoons of lime juice, (I like to add a lot of limes to make it very zesty)
    1-2 tablespoons of red wine vinegar
    salt and pepper to taste

    This recipe can be altered to your liking. I like it very zesty, so I added a lot of lime to it. I add all the avocados I have at home, yummy!!

    This recipe is versatile. You can put it on whole grain rice, fish, pita, crackers, or eat it with a spoon. This recipe makes a bowl big enough for entertaining or what I do is keep it in the fridge and eat it throughout the day’s meals.

    Looks nice, though I’ve never tried a veggie soup with oats.
    My version of vegetable soup contains broccoli, carrots, celery, tomato, courgette, some dill and parsley. I often cook cauliflower for myself (no one else in my family fancies it) and then use the ‘broth’ for my soup. Sometimes I would use thin chicken broth.
    My other vegetable soup is summer ‘borshch’, a sort of summer mixed soup that contains courgette, carrots, beet (the entire thing – the root plant and the top), onion, couple of potatoes (small), tomato and parsley. It’s really nice and can be eaten both hot and cold since it’s a vegetable soup.

    I always add some legumes to my soups, thats more satiable and they contain lots of protein. E.g. mungbeans have about 25% herbal protein, very convenient for vegetarians.. ;-)

    You can also improve the flavor, if you roast the onion and some garlic in the oil.

    Don’t apologize for simple recipes. Fast, easy and delicious is what I need. I am alway looking for simple recipes that use basic ingredients. I will have to wait on this one though. We have had 12 straight days of temperatures over 90 degrees here in Atlanta.

    I made a very simple recipe last week – I had bought a small watermelon for the first time in my life and happened to stumble across a salad recipe in a magazine the very next day! It was sooo yummy, refreshing, and light!

    (I didn’t bother to write down measurements – adjust the amount of leafy greens and the watermelon to the amount you will make, as I did)

    Afternoon Melon Refresher

    Arugula
    Cubed watermelon
    Honey
    Balsamic vinegar (***we have Balsamic and pomegranate vinegar at home and it was *perfect* :)
    Salt
    Pepper
    Olive oil
    Feta cheese

    Reduce the Balsamic with a tablespoon of honey on the stovetop (I adjusted the recipe for the portion I made)…the recipe called to let that mixture cool, but I found that it solidified, so I promptly heated it up again! :p Prep the watermelon and toss with the arugula (this was my first time trying arugula – I was surprised to find it nutty and meaty! ). Toss with some olive oil, then toss with the reduction, which then did cool since it was mitigated by the coolness of the fruit and veg. Season to your taste with salt, pepper; toss with feta cheese.

    I can’t wait to make this soup…it so reminds me of my mother’s and grandmother’s cooking – we’ll see what my partner thinks of it…

    YUM!! I love leeks and lentils together!! I fix a leek and lentil soup that is to die for!!!
    2 leeks chopped
    1 onion
    1 clove garlic
    1/4 cup dry brown rice
    9cups vegetable stock (look for low sodium!!)
    2 stalks celery (chopped)
    2 carrots (chopped)
    19oz can tomatoes
    1 cup lentils (dry)
    sprinkle of thyme
    chop it all up, throw it in a pot and let simmer 2-3 hours. YUMMO! My FAVORITE SOUP!!!! 2 big bowls is only about 200 calories too.

    Oh my God,I remember my mom use to make this soup for me in POland when i was little girl,and kids dont usually like vegetables i couldnt stand this soup.When i was called for dinner i knew this soup was on the manue .I can remember the taste and smell still until this day.My stomach is sensetive to smells,especially seleray,my kids love the vegetables,its frustrating seeing your kids eating and i cant because i will throw up.LOL

    I have been playing with recipes because I am vegan. You should try this one, it’s so refreshing on a hot summer day:
    280g (about 2 cups) frozen organic raspberries
    1 frozen banana cut into pieces
    1 mango, pieces sliced and then frozen.
    2 Tbs flax seeds (ground in coffee grinder)
    2 Tbs guava syrup
    1/2 to 1 cup ice water.

    Place everything in a food processor and blitz for a couple minutes ( 2-3). Add enough water to make it slushy consistency (or sherbet) however you like. Serves 2.
    This is how I get fruits into my diet in summer, especially antioxidant high fruits. I snack on apples through rest of day. I tried variation with blueberries and banana, it did not work so well.

    I made a soup two days ago, because I was not feeling well and I’ve been trying to eat more soups and smoothies instead of solid foods. I guess it was similar to this, but i made a chicken stock with boneless skinless chicken breasts, bay leaf, fresh thyme sprigs, whole head of garlic and peppercorns. I strained it and used the stock as the base and thickened it with just a bit of flour but the oats sound interesting and I think I will try that next time. Then I added shredded the chicken…added peas and pearl onions, celery and carrot. I added a lot of those veggies. Some garlic powder, parsley, fresh black pepper. It was delish and I think it helped me with my cold. :)

    Lighter soups like asparagus are perfect for spring & early summer. Also, chilled (fruit) soups are a great treat!

    I would suggest adding tomatoes (even roasted ones) – to provide a little more acidity to the mix.

    The soup could be put through the blender and served cold for these hot summer days – like a vichysoise (sp?).

    My most favorite kitchen appliance…the electric pressure cooker. It takes the recipe you have and cooks it in a fraction of the time…like a crock pot on roids. I can cook unsoaked beans in 1/2 hour and it makes awesome soups.

    I love these simple recipes. Here is what I had last night…
    * 2 teaspoons grated lime zest
    * 2 tablespoons fresh lime juice
    * 1 tablespoon unsalted butter, melted and cooled
    * 2 tablespoon olive oil
    * 1 teaspoon stevia
    Mix these in a bowl then add
    * 1 cup quinoa cooked in rice cooker
    * 1 can black beans, rinsed and drained
    * 1 can corn
    * 2 medium tomatoes, diced
    * 4 scallions, chopped
    * 1/4 cup chopped fresh cilantro
    * 1 diced avocado for the top

    Do you like Asian food? I`d love to get some inspiration for cooking with soy sauce, sprouts and for example bamboo…Maybe you gonna have a recipe like this in the future?!
    I also tried to make a sweet-sour chili sauce.It`s great for hot meals but also for salads! i admit that the prefabricated tastes really nice but i`d prefer to do it with fresh ingredients! but actually i didn`t really make it;-) maybe anyone`s got a tip..?

    Well, I have two questions for you…

    1) Is it “OK” to workout with an empty stomach, after you wake up? If not, what would you suggest to eat before your workouts? I know you’re into a lot of fruits and veggies (and so am I), do you think like… eating two apples or something is enough? Because sometimes I get highlights when I’m pushing really hard and I guess it is because of the lack of sugar in the blood… I don’t know. What do you normally eat before you workout?

    2) What do you eat after you workout? I read in one of your/Frederick’s posts that you should eat right after the workout (like 10-15min after). Do you drink (cow) milk (because I know it’s good to help the muscle recovery)? I know you have posts about this topic but sometimes I don’t find them to be as clear as I would like them to be

    (I am aware that what works for you may not work for me)

    If you want to eat less fish, eggs and meat and dairy food, but still want to eat delicious, then try the following home made tapenade/spread:

    mushroomspread: chop 500 grams of mushrooms in to small pieces, bake them in olive oil and add “tamari” or a bit of soy sauce into the pan for a salty taste as well as spices you like. Put them in a bowl together with sundried tomatos, small capers, chopped onion, a few green and black olives, garlic and some pine nuts, mix it all together with an electric mixer and : voila! Delicious!

    Put it on small slices of cucumber for example or fill a baby tomato with it!

I think if you can use vegetable broth(organic one if you use store-bough),it might enhance more veggie flavor in the soup.My favorite soups are minestrone,lentil,vegetable&barley because they’re so simple to make and very healthy.

    I’m curious to your thoughts on nutrient timing for fat loss. I’ve been reading that you should eat the bulk of your carbs in your post workout meal. I workout in the morning, but last night I ate a sweet potato with a lot of raw veggies for dinner. Do you think I should keep meals such as this for post workout only, and eat a higher protein meal in the evening? If you have time, I would certainly appreciate your opinion. Thanks!

    This is very strange on account since the beginning of May I started going much more natural and on occasion I’d even startle myself because It’d be in the middle of the night and I’d say to myself “Oh snap I forgot to have meat today” lol and its cool. I do a delicious tomato soup thats spicy.

    Swords Tomato Soup:

    Nine to twelve cherry tomatoes washed
    Onion to taste
    Two or three garlic cloves in thin slices(keep to the side)
    Spicy green chili
    Carrot if you prefer
    Oregano
    Red chili powder
    red crushed pepper flakes
    Mushrooms cut into nice slices

    Blend everything except for the garlic and mushrooms
    In a small pot saute garlic in olive oil till light golden
    Take blended puree and add it to the pot let it cook
    When it doesn’t taste like raw tomato add your spices
    Cook for a minute thereafter then add water and in seperate pan saute mushrooms in alittle olive oil and add once the soups simmered. This soup is delicious and the sauteed white mushrooms at the end are a nice surprize kinda like crackers in your soup but healthier!!!

    Had a great veggie soup at a restaurant the other day, and I’m going to try & recreate it this week. You’ll have to work your magic to make it fat free, but here are the basic ingredients:

    Tomato soup broth
    yellow squash
    carrots
    cauliflour
    celery
    possibly onions, if you like them

    It was great! I don’t even like the above ingredients (except for the broth & carrots) by themselves, but the flavor was wonderful! You can experiment with herbs to taste, too. I might try it in the crock pot. Love sharing recipes!!

    just a short question to you according to your experiences….

    First of all: I LOVE ZUZANA’S WORKOUTS

    But now the questions…

    Which nutrition plan should I follow according to these workouts? My favourite is 30% protein, 10% carbs with 60% fat, but it seems that it is not the best in combination with volume workouts or lactate inducted workouts, isn’t it….

    Which eperience did you make?

    Is it really required to take a look on the nutrition plan (the amount of fat, carbs and protein) in combination with Zuzanas workout? Or can I do it with the 30/60/10 amounts? What do you think? What’s your experience?

    hi zuzana…..ive watching you for some time now……….I JUST LIKE ALOT…….U LOOK GREAT…I AM TAURUS TOO SOO….I KNOW HOW IT IS TO BATTLE WITH THE WEIGHT…….ive been doing alot of fitness too but at a moment i became kinda anorexic……could this be the cause of my serious constipation??i didnt go to a dr because i know he is going to ask me about my eating habits and i relly dont wanna talk about this YET….but do u know a diet or some remedies….that could help me??i became desperate i tried everything almost…..can this cause weight gain???i train everyday following your videos…..i am 106 lbs….and i eat very very little and i am a vegan and a raw-foodist…i dont eat nothing cooked….can u maybe recomend something for me cause this has become a very serious problem in my life………???

    Shallots are in the onion family. They are smaller and are often referred to as having a flavor between onion and garlic. They are a real thing.

    What a great idea to use quinoa. I can’t eat oats, and don’t eat eggs… so that sounds like a perfect solution to both (to thicken the soup and add more protein). Thanks!

    Try adding some tomatoes, they go good with garlic and the cooking helps release more of the lycopene that’s in the tomatoes.

    High energy food: A few avocado slices on top of fresh baked bread, topped with diced tomatoes. I’m also a big fan of green smoothies! Look a few up online! Make sure you get a lot of raw veggies in- good for digestion and it keeps the nutrients/enzymes alive!

    you’ve made a great contribution to quality of my life, so it’s my turn now: try green smoothies! Simple as that, half volume of fruit, half volume of salad or kale etc, banana or avocado to add thickness, mentha , ginger or lemon to improve taste. Blend and enjoy! I’m practicing two of my five meals a day in this way for the second month, feeling good and looking good and even better. It surely will not improve your looks, because you already have your top look, but it will help you get more vitamins and minerals out of food and minimalise the need for food suplements. Use eco 6 organic stuff, it’s worth it also because of better taste if we neglect the health issues:)

    chocolate tofu pudding recipe: put 1 lb (about a 400g tube) of silken tofu, 8 oz melted chocolate (or 1 1/3 cup of melted chocolate chips), 1 tsp vanilla, and 3/4 cup of sugar syrup (see below) in a blender or food processor and blend until smooth. pour into container(s) and chill for at least 30 minutes prior to serving.

    sugar syrup: in a saucepan over low-med heat, melt equal parts sugar and water until sugar dissolved

    You kick ass, your workouts are amazing, even though i can barley walk today it makes me want to keep going so i get stronger. I am wondering what you eat in day and how many calories?     I am going to try the vegamatarian diet too. Zuzanna is built and eat, mainly, vegetables. Does hubby workout too? What does he do for exercise? He should be sweating too on here.

    hi i am no expert but im a lover of working out and eating healthy. i just had my third baby girl and i am on this website to get new workouts and to learn again proper size portion of food
    its soo important to not over eat , no junk food etc
    right now im working out moderately everyday
    i am breastfeeding so i cant go too hard
    dont want to lose my milk supply. and im eating 5-6 meals and try to keep it low fat just healthy fats like almonds and olive oil and i also still take my prenatal vitamins
    this is a sample of what i eat in a day
    wake eat breakfast. bowl of whole grain cereal and any fruit usually i eat an apple or half a banana

    snack about 2-3 hours later i eat some veggies and fruits cut up. bit of watermelon, some peppers , carrots whatever

    lunch i eat proper portion of fish or steak , chicken whatever with veggies cut up. if i have a sandwich its tuna or salmon from can, just drizzle with olive oil
    also if i eat raw mushrooms i also drizzle with olive oil

    snack i would again eat a piece of fruit or veggies

    dinner spinach salad with pine nuts , almonds, chicken cut up , proper portions again.

    snack might have some plain yogurt with fruits in it some granola and oats in it.

    so thats just a sample. i dont eat the same things everyday. just tiny little meals and snacks
    mostly fruit and veggies, some protein, of course once in while toast with peanut butter , whole grain toast etc.
    but if any needs an example it may not be perfect but its working for me.

    I just came across your site and enjoyed it very much.
    I am a fitness model from Los Angeles and always looking for ways to improve my physique for shoots. Most female peers in the fitness Industry opt mainly for the gym to buff areas like the shoulders.
    I am wondering if you got your strong shoulders from bodyweight workouts such as the ones you show on your website OR if you gained the mass first through traditional weight lifting at the gym and are now “shaping it/redifining it” and keeping it with your workouts.

    This is SO GOOD! The only thing I changed was that I omitted the rosemary b/c I didn’t have any and added a very small amount of hot sauce (hubby is west-Indian, and it goes in everything we eat).

    I think this is one of the healthiest vegetables. It always helps satisfies my hunger and doesn’t have much calories versus the amount.

    Omg these workouts are amazing even though they leave me extremely sore the next day, but I am sooo thankful for everything zuzana shows on the vidoes…I was 147 Lbs and now I’m 134 so thanks for everything zuzana :-)
