Our Anniversary Dinner Recipe – Indian Dish

This is the meal that we had for our anniversary dinner. It doesn’t take a long time to prepare it and it’s really super easy. If you have been following for some time, than you know that I am experimenting with vegetarian diet. I don’t cook meat at home so Freddy has meat only when we go to restaurant which means that his consumption of meat has decreased significantly as well. I have to say that he hasn’t been complaining about it once, because he really enjoys his veggie burgers and the veggie dishes that I make. So far I have noticed that I feel much lighter and so does Freddy. I am not saying that I will never eat meat again, because never say never, however I am really enjoying this lifestyle experiment.

These are the ingredients that you will need:

1 average size brocolli

1 leek

1 slice of pineapple (about 2 cm high)

3 cloves of garlic

Fresh Ginger – cut 3 small pieces to match the amount of garlic

1 can of Chickpeas

1 large onion

4 tbsp of Olive Oil

Spice:

3 tbsp of Mustard Seeds

1 dried chilli pepper

1 tsp of Ground Cumin

1 tbsp of Corriander Seeds

1 tsp of Turmeric Powder

2 cloves

1 piece of Cinnamon Bark (about 2 cm) or 1 tsp of Ground Cinnamon

2 Bay Leaves

salt

3 tsp of Brown Sugar

2 – 3 tbsp of Lime Juice

Side Dish:

Indian Basmati Rice

Step by step guide:

1) Cut the broccoli and leek in small pieces and set them aside in a bowl. Start boiling water for the rice.

2) Chop the onion, garlic and ginger into smaller parts and grind them in a food processor or a blender.

3) Add cumin, coriander, cloves, chilli pepper, and cinnamon to the blender and make a smoothie.

4) Heat the oil in a bigger pot and fry the mustard seeds until they start getting slightly brown.

5) Mix in the onion smoothie and fry for a little bit longer.

6) Lower the heat and add bay leaves, turmeric, broccoli and leek.

7) Fry the mixture over medium heat until the broccoli is half cooked.

8) Add the chopped pineapple, 1 1/2 cup of water and chickpeas in with the broccoli. Mix it well and cover with a lid. Cook over a low heat until the veggies are cooked.

9) You will have to taste it and adjust the flavour by adding salt, sugar, and/or lime juice.

The whole process shouldn’t take longer than 30 minutes. I hope that you will enjoy this meal and if you come up with an idea how to make this dish even better, please share in the comments below.

    I know that like oats, so try these cookies… i love them!!
    Oatmeal Coconut Cookies:
    125gr flour
    75gr dark brown sugar
    75gr brown sugar
    200gr grated coconut
    200gr oat grains
    75gr butter
    2 Tbsp honey
    1 / 2 teaspoon baking soda
    2 Tbsp hot water
    1 egg white

    Mix the flour, sugar, oats and coconut. Melt the butter and honey (put in microwave for a few seconds). Dissolve baking soda in hot water and add to butter and egg white mixture.
    Mix all ingredients with hands and mold cookies, place them on a tray lined with parchment paper.
    Bake for 15-20 minutes at 180C.
    (The secret is to make these cookies stay flat, then when they start to swell, open the oven and flatten them with the back of a spoon. I did it twice, once after about 5 minutes and another near the end .)

    as your anniversary present, let me give u one of my fav indian recipes:

    POTATO SPINACH STEW

    chop up some potatoes and fry them in a bit of oil and some garlic. add your fav greens e.g. french beans, fenugreek leaves, coriander leaves. add sliced green and red chillis. add salt to taste, and add frozen spinach. cook covered on low heat till the potatoes are soft and spinach has mixed in nicely and is cooked through. then add some ghee (or butter), about 1 or 2 tbsp, and stirfry for a couple of minutes on high heat. lower heat and cook covered for another 3 or 5 minutes. enjoy.

    you can use fresh spinach too but i prefer frozen for this dish.

    I am not married but I think marriage is different then just boyfriend/girlfriend. I dont think marriage unites you and makes you almost like one. I dont think this happens with out the marriage arrangement. Although many people stay together almost as if to prove it wrong, I dont believe they have this though. I think its a spiritual thing that waa set in place by the highest power in the universe and when you make the commitment -that minute – you can tell.

    That looks like a really good recipe, I hope you had a nice day together. As for Indian recipes, being Pakistani, i hvae been taught from a very young age how to cook asian cusine. If it’s vegetarian dishes that you are after, then I may be able to lend a helping hand. One of my favourites is mixed vegetable curry. Also I make a mean lentil curry.

    For the mixed veg curry you will need,
    baby carrots
    peas
    corn
    onions
    tomatoes
    potatoe
    green beans
    garlic
    Ginger
    capsicam

    spices,
    Tumeric
    cumin
    corinader seeds
    chilly powder
    salt
    Chilly flakes

    steps
    finely chop the onions, garlic, Ginger and capsicum. Cook in large pan and add a chopped tomatoe. Whne the onions become transparent add all the spices. Let that cook for a few minutes then add the veges. Once you have done that add water so that the veges are sumerged to the point where you can only see the top of the veges. Put on medium flame unti the veges are cooked and the water has evaporated. When you are about to serve add some feshly chopped coriander to the dish and cook for two additional minutes. Then enjoy!!

    I was doing “the clean diet” about tiny portions many times during the day, but I lost some weight that I didn’t want. So now my portions are bigger and still many during the day, but after my biggers meals, I feel extremely full and I hate that feeling because I think that my stomach got used to small portions, but I think that this is the way to gain some weight, it’s that ok? But, is better if I keep my smalls portions and eat more times during the day than eat some meal that really let me tired?
    what do you think that I have to do? please help me :D

I actually don’t do your workouts but I watch them everyday, but I do work out a lot at the gym like 5 times a week.     Hi Zuzanna and Freddy! I have a good vegan recipe for you, it’s a greek salad (so simple!)

    Greek Salad:

    1 low fat feta cheese
    1 Tomato
    1 Red pepper
    1 cucumber
    1 red onion
    2 tablespoon of lemon juice
    2 tablespoon of balsamic vinegar
    Add some pepper and oregan
    And if you want you can add 2 tablespoon of Greek salad dressing (like Kraft).

    You cut the feta cheese and the vegetables in pieces, and mix all the ingredient together.

    Since I discovered this recipe three weeks ago, I eat it every day, this is so good! :)

    Hi Zuzana,
    I had an idea which I think will help out a lot of people following your awesome work outs! I’m sure everyone has noticed your taking a different approach with the explanation of exercises through the videos istead of the pictures you used to post on here for each work out. What do think about having a seperate tab with every different exercise and the picture. This would also mean you’d only have to post the picture with the exercise once. Just a thought, I know, for me personally, it would be super helpful and save a bit of time rather than watching the video several times. I hope you consider this idea, thanks, Ames.

    Aloo ghobi

    4 potatoes (aloo)
    1 cauliflower(ghobi)
    3 fresh tomatoes
    2 onions
    fresh ginger (up to yout taste how much)
    1 tsp chilli powder
    1 tsp garam masala
    1 tsp cumin (or jeera)
    1 tsp coriander
    1 tsp turmeric
    salt

    Fry chopped onions and shreded gigger until brown. Add all spices, salt and chopped tomatoes and add a litte of water (1/2 cup). Cook for a lttle while. Then add sliced potatoes, cawliflower and add more water (to cover it). Cook on lower heat until veggies are cooked.

    Aloo gajar (5 portions, cooking time 25 min)

    ½ kg carrots
    3-4 bigger potatoes (cut into cubes)
    3 cloves of garlic
    2 biger onions
    cumin
    turmeric
    meethi (pískavice/ senovka grécka)
    3 smaller chilli peppers
    tomato puree
    dried or fresh coriander
    little tsp garam masala
    olive oil
    salt
    Squized garlic, chopped onions and cumin fry in pan until onions are “dosklovita:)”. Add tomato puree, chilli peppers, salt, if you use dried coriander add it now, garam masala, potatoes and sliced carrots. Steam without adding water and cover with a lid. Stew often. At the end off cooking add fresh coriander (when you haven´t use dried) and methi.

    serve with chapati – traditional indian damper (placka)

    Chapati – flat “bread”

    corn or wheat flour or any other kind flour you like
    water

    Make a mixture/ dough from water and flour and roll it into flat form. Can be bake in oven (normaly baked on wooden plate on fire:).

    I know you’ve made a change in your diet lately and wondered if you ever make green smoothies? I started drinking them daily (when I wake up mainly) and sometimes twice a day for the last month and have noticed an increase in my energy.     I think it’s different: Cumin are seeds that make a spice and Corriander are Cilantro seeds which make a whole other spice.

    Not sure where to put this question so I’ll put it here and perhaps in another post… I was wondering what size you are? I saw that you had size 4 pants that you said were too big for you now but I didn’t know if that is the same size 4 here in America because I would guess that you were smaller than that? Also a totally personal question that you don’t have to answer, are you on birth control and if so what kind because you obviously have no water weight! Thanks!!

    Home made Indian food is very healthy but avoid eating out because of the unhealthy way of preparing.There is so much oil and ghee used in such type of cooking that it destroys the very concept of healthy cooking

    Hey Zuzana, I will definitely try this. Looks right up my alley. I hesitate with a lot of Indian dishes because they use a lot of coconut milk and coconut and I’m just not a fan.     Happy Anniversary!

    If you need recipes, try vahrevah.com the cook is south Indian but makes all types of great Indian recipes from all over. OR for more simplified cooking: Indianfoodforever.com. (I love this site)

    You should know that the basic of all Indian cooking is:
    -oil in pan

    -If using whole spices:(cinnamon/cloves/coriander/cardamom/cumin/basil leaf/rarely mustard seeds)- add now until brown and fragrant (You can use all of the spices above together or separate)In the summer you should keep these minimal as they increase a type of heat in the body, which in-turn will create toxins.

    -add chopped onion and brown it

    -add chopped ginger and garlic (approx .5tsp each)

    -add turmeric, salt (cayenne)- optional
    (You should also know that, when you are keeping your whole spices low or not using entirely, you may add powdered coriander for flavour when adding salt and turmeric)

    -At this point if you want a more gravy/curry dish you may add chopped fresh or canned tomatoes and cook on med-low heat until they are quite mushy.
    -If it is to be a dry dish, add approx. a tbsp of canned tomato paste and less then a 1/4 cup of water.
    -add whatever veggies you are cooking.
    -You may even use beans soaked overnight with this basic recipe. Add a 2-4 cups of water, boil, reduce,cover and cook about 20 mins-30 mins depending on your oven. Just remember that our bean dishes are soupy with quite a bit of broth/curry. So add the amount of water according to the amount of beans you have. Keep in mind that the water will reduce during cooking.

    This may seem complicated, but trust me it’s not once you get the hang of it and can memorize the basics. It’s all according to your taste-buds from there.

    Vegetable dishes can be served with bread/roti.
    Bean dishes can be served with boiled rice or roti(chappati)

    PS Just wanted to answer the comment above by Liz.
    Liz, you’ll be happy to know that mainly south Indian and coastal Indian dishes are cooked with coconut or coconut curry. North Indians don’t really like it… so definitely give North Indian food a try. http://Www.Indianfoodforever.com
