Pasta with Portobello Mushroom Recipe

Hi guys,

We have been sharing our workouts with you and now we want to start sharing what we are actually eating on a daily basis so that you can get a handle on the types of food choices we make. We want to put this out there so that you guys can start to follow along at home as part of our 2 month SUS (shape up for Spain) challenge. We are not trying to be obsessive when it comes to our diet – what we are trying to do is establish some basic eating habits. This is what we will eat during our typical day from the time we wake up:

7.30 am Breakfast – Fresh Fruit

10.30 am Snack #1

1.30 pm Lunch – Salad

4.30 pm Snack #2

7.30 pm Dinner – Home Cooked Meal

We usually go to sleep around 12am so if I get hungry after my dinner, I will have a very light snack. Drinking enough water is also important so I will try to do my best.

We will be sharing all of the recipes and types of snacks that we eat during the next 2 month. One of our main goals is to avoid processed food as much as possible. I do realize that this won’t be always possible and I really don’t want to be too obsessive. It is important to stay sane when you are establishing some basic rules in your diet.

Today I have a super tasty and healthy recipe for you. This recipe is so simple to make that even someone  with zero experience in the kitchen will be able to prepare it. We had it for dinner tonight and we both loved it. These are the ingredients:

3 large portobello mushrooms

8 garlic cloves

2 green bell peppers

Parmigiano Reggiano cheese

Extra Virgin Olive Oil

Balsamic Vinegar

Black pepper

Salt

Pasta

1) Cut the mushrooms into pieces about the size of your thumb

2) Peal and chop 5 garlic cloves into small pieces

3) Heat about 3 table spoons of olive oil in a large skillet over low heat. Add the mushrooms and garlic. Cover and cook, stirring occasionally, until the mushrooms are tender.

4)  Cut the bell peppers into similar size pieces as the mushrooms and add them into the skillet. Add a little bit of salt and black pepper.

5) Chop the rest of the garlic into small pieces and set it aside.

6) Bring a pot of lightly salted water to a boil, then add the pasta and cook according to the package directions.

7) About 5 minutes before the pasta is cooked, add the remaining garlic into the skillet of mushrooms and about 1 tablespoon of balsamic vinegar. Mix well and cover with the pot lid.

8) Drain the past when it’s ready and add it into the skillet. Mix all the ingredients together and then serve immediately.

9) Grate fresh Parmigiano cheese over your portion.

    We had a meal I made last night from a receipe book and it was amazing – really filling and had no meat.

    Get 1 butternut squash, cut in half and scoop out the seeds. sweep a little olive oil on and drizzle with balsamic vinegar and season with salt and pepper. Put in the oven for 45 minutes.

    In the meantime, chop up one onion and 2 garlic cloves and put on the hob in a saucepan and a little olive oil. Add 1 tin of chopped tomatoes, 1 tin of chick peas and 2 tablespoons of tomato puree. Stir and cook for 25 minutes – in the last few minutes stir in baby spinach until it wilts.

    Spoon the sauce into the butternut squash and you’re done! All veg and a little oil. Amazingly healthy and incredibly filling (as well as tasting amazing).

    We made a butternut squash each but we could only eat one half each! I have the other half for lunch at work today :)

    Even I have fruits for breakfast. Could you tell us how much fruit should be consumed because I tend to overeat. For example, I have one banana, one apple and one mango. Do you think this will make me put on weight?

    Hi Zuzana and Freddie you have the same eating schedule as I do except my dinner is usually my lightest meal, more like a snack and my lunch is basically my main dish.

    I think adding fresh oregano and thyme would make your dish really delicious.
    I have been putting my own work outs together this was last nights.
    set timer for 20 minutes

    10 burpees

    20 v crunches

    5 pull ups

    50 mountain climbers

    do as many reps in the time alloted. My score was 4 rounds and 4 burpees

    I haave definitely learned a lot from you in regards to making my work outs more efficient and also fun.

    I’m assuming the pasta is wheat, right? I’m trying to figure out my portion sizes and would love for you to give me an idea of what a good size would be for meals.

    I’ve always been an interval/ circuit type trainer and love your workouts thus far. I’m 5’6 and weigh about 117 lbs. I’m not trying to lose or watch the scale just wanting to start to show more definition. At times, like the last year while planning my wedding I leaned out and became SMALLER than a size 0, which is never my goal. I would like to range between a 0-2 and just be defined.

    Any suggestions would be great….

    Pretty nice! How many servings do you get from this?

    Here’s a vegetarian recipe that I found online once and I really like. It’s Curried Red Lentil Soup with Lemon and it works well as a nice light dinner or lunch. When I want to make it more hearty I bake a sweet potato, chop it into bite sized pieces and throw it in there.
    Anyways, here is the recipe.

    2 cups red lentils
    4 cups vegetable stock
    1 large onion
    4 celery stalks
    2 carrots
    4 cloves garlic
    1/4 cup chopped cilantro
    1 Tbs. curry powder
    1 tsp. ground cumin
    2 Tbs. lemon juice

    Chop up the veg into whatever size chunks that you prefer.

    Bring lentils, vegetable broth, and 4 cups water to a simmer in large pot. Reduce heat to medium-low, cover it and let it simmer for 5 minutes. You’d want to stir it occasionally.

    Add onion, celery, carrots, and garlic; simmer uncovered for 20 minutes. Add cilantro, curry powder, and cumin, and cook 20 minutes more, or until lentils are soft. Season with salt and pepper if you’d like and stir in lemon juice.

    Makes about 6 servings.

    I really want to try your 60 day challenge too! Even though it’s a couple days into it now. But Zuzana, I REALLY need your advice.
    I’ve been trying to lose body fat now for a couple of years, and at first I was sucessful. But now whenever I try I can go a couple of days of eating small portions of healthy, balanced meals around 6 times a day, until I feel slightly full. But then I get a craving and I give in, then before I know it I’ve started to eat everything in the house. It makes me feel awful. How do you overcome cravings? I really am determind, especially with the exercise.
    Anyway, love your sight! Hope you had a great time in Italy!

    Fantastic diet plan, 5 meals ,3 hours betwen them. Carbohidrates from fruits and vegetables all day (no procesed ) and you add protein, I suppossed ,but why pasta for dinner? It’s your post workout meal when you introduce the carbohidrates or do you make it all nights??

    And what about your snacks???? Ummm, I’m waiting for new ideas !!!

    And I have a question…I began the summer fit 6 weeks program, I’m in 2e week. If I do your suggested workout (15-30 min) in am and a cardio (20-30 min)in pm, is it too much?…Don’t we have to wait for 2 days to let muscles recover? …Please write me back when you have a minute. Thanks.

    Thanks for sharing!!! I am ALL for this 2 month challenge. I have been at a platue for a while now. I am not seeing much of an increase in performance or muscle mass…. I need to kick myself into gear. I have also been falling off the wagon of eating well. I have been eating 3 and 4 servings of peanut butter A DAY! I don’t see how I am not overweight. LOL
    So how much fruit are you eating? I have a hard time with just fruit. I tend to have a blood sugar crash if I go 3 hours without anything after fruit. Maybe if I ate 1/2 at my first meal and saved the other half for in between breakfast and snack 1.
    Anyway….. you hadn’t posted a workout yet so I made my own…. thought I would share.
    It is a little more cardio than most of your recent workouts, I figured I could use some to help burn off my peanut butter;)

    15 minutes in hell

    interval training. (50 sec work, 10 sec rest for 15 rounds)

    1. jump rope
    2. push ups
    3. jumping jacks
    4. jump squats
    5. mountain climbers
    6. pull ups
    7. burpees
    8. front/back lunge switching legs
    9. high knees
    10. hip rolls (I think you call it a butt lift or reverse
    crunch)
    11.butt kicks
    12.crunches
    13.jump rope
    14.hanging knee raises
    15.jumping jacks

    I was sweating like a pig when I was done;)

    Hi Zuzana,

    That recipe is a bit similar to the one I make except I add onions for flavor and chicken for more protein. Whole wheat pasta is good, too. Also, try adding more protein to your diet. I lost a lot of muscle definition and strength when I went vegetarian for just a couple of weeks. Anyways, I just finished my version of the 18min S&M workout by doing it in 12min for two rounds instead, because I had just finished an hour of legs. Shower time!

    This is exciting! Are you actually going to post your full meals and amounts, or just what you’ve put in this post. It would be awesome if you put exactly what your eating and the amounts. I know it will differ from person to person for amounts, but it’s still a great way of seeing how you eat on a regular basis. Thank you for all you guys do, I missed your workouts while you were on vacation, but glad to see you guys had a great time.

    Sounds delicious! I can’t follow your new diet exactly because I like to have bread and peanut butter or yogurt, oats and nuts with my fruit in the morning when I need a bigger meal. I love lunch salads, I add beans, cheese, nuts, fish or chicken to salad and eat with bread. I also love to make a big batch of a grain or pasta salad like couscous with veggies or your tuna pasta with cranberry recipe :)

    I have been having such good results with your old way of eating, so thanks for all of the tips! 5-6 small portions a day is the way to go for me, I love it!

    can i make a suggestion? if you want to start your diet in a good way you have to make sure that the right food is in the refrigerator like: only protein-chicken(without the skin and not fried\), fish,vegatables, fruits, all these in the first month and on the second month you can add brown rice, whole wheat (pasta, bread) no white suger, no coffee, cola, only water, tea. is is important to eat your body needs it to burn fat good, do’nt strave your self you wo’nt lose fat, only water and your body will use the energy in your muscles and that affects your metabolism and slow it and you find it hard to lose weight. make sure that at home you always have the right food and drinks, prepare food for work and what you drink, doday there are many good and delicios food that you can lose weight and keep your energy levels high and your muscles are not effected. remember the key is to eat but to eat right!

    I am very excited to be following you with your new diet and exercise plan. I go to the gym for cardio and weight training 3-4 times a week, so on the days I am not at the gym, I will be doing the workouts that you do on here.

    where do you get your recipes?

    and i think that your having trouble chopping your vegetables is because the knife that you are using is too small. the knife that you were using looked like a fillet knife, but i’ not sure. My dad and i ALWAYS cook and using a knife with a bigger knife is a lot easier, i mean that’s the knifes purpose anyways :) and remember to always keep your fingers curled in when you are chopping ;P

    I am beginning to really trust what you say. When you say something is good, it is! This recipe was so tasty, easy, and healthy. My meat-eater boyfriend even went back for seconds. It is fun trying new things that are good. I also really liked the quinoa Indian chicken recipe!

    And for that matter, when you say workout is going to be hard it is. You give great tips on proper form and getting the most out of the exercise. Again I trust what you say.

    Healthy living and exercise, has always been a big part of my life. But, since I found your workouts and started doing them, about 3 weeks ago, I have never felt so fit! Plus, my sister-in-law (it really helps to have a partner in this challenge) and I are on day 12 of your NO SUGAR CHALLENGE, the benefits way out weigh the pain of giving up sugar. I feel sleek and fit into clothes I have not worn in a while.

    I have told my whole big family about your site, and the gymboss is the birthday present of the summer for by brothers and sisters.

    I am constantly impressed by how genuine you are! And how you and Frederick are a really nice couple and so down to earth. Even if you think you can, I don’t know if you could ever really imagine how much of a positive impact you are having on people’s lives and in so many ways. Your site; you and Frederick are gems!     I just wanted to let you know that I follow your videos for quite a time yet and I do enjoy them very much! =) It’s pretty interesting to me what you’re doing… maybe because I share the same ideals and lifestyle. I really like to keep myself in shape and do something for my healthiness although I never had any problems with my body yet… even if I don’t do any real sports and go along with eating fast food I don’t loose my shape. I don’t know why it’s like that but I think it’s for some genetical reason *grins*

    I really like the recipe though I’ve not tried it myself yet. But already the imagination of it is great and makes my mouth watering ;) I’ll definately go for it and let you know about my experience and opinion on that.

    Hey Zuzana~

    I have a tip for cutting peppers! After you cut them open and get the center and seeds out, cut them into slices from the inside of the pepper… this way, you don’t have to worry about the knife slipping on the shiny outside skin. The knife actually grips to the inside cells of the pepper for a cleaner cut.

    Thank you so much for your website. I’ve been following your work outs and diet tips for the last 3 weeks. I am not trying to loose much wait but rather to get more muscles and burn a little fat on my stomach (so i can c all those hard worked muscles :) i noticed the change after first 2 weeks, so are the others. It’s amazing i should say! i was professional sportsman for 12 years at the age of 17 i got a back injury and since then was trying to work out on a regular basis but it was very painful and hard, because regular exercises gave too much pressure to the spine. then i found your site and gave it a try. My back doesn’t hurt no more and i feel lots of energy. Thank you so much guys and keep your great work up!!

    The 30 day no sugar challenge is one of the best things I think I’ve ever done for my diet. After my 30 days was over, I figured, why go back? I never crave sugar any more. So tomorrow I will successfully have gone 2 full months without refined sugars or junk food. Just remember that the first week or so is the hardest. Once you get past that, you’ll feel great and the rest will be easy ^.^

    Heya,

    I was just going to comment, I know that a lot of your recipes you tend to chop or even puree your vegetables. The only thing with that is…the more you break down the vegetable, the less nutrients you are taking in.

    I would try to eat more whole vegetables or just bigger pieces so that you are really biting into a full blast of nutrients and vitamins.

    So that’s what you both will eat for 2 months straight?? I reallyy want to try your diets, and I do try, but most of the times I dont make it through. I don’t think I can eat just fruit for breakfast and a salad for lunch every day… D: I want to try to lose maybe 10 more pounds. Then I’ll be fine =)

    Hi Zussy – we don’t take any “fitness” or “diet” supplements what so ever. We try to get what we need from our diet of mostly fresh foods. Interestingly enough I was just reading through a recent copy of People magazine and buried in the back was a legal announcement that a certain supplement company was settling a multi-million dollar law suit for shady business practices and making completely unfounded and misleading claims about it’s products. These products are unregulated – and we have read about people damaging their livers as well as other vital organs by taking these pills and powders. Of course it is completely your call, but we always suggest that people save their money (these miracle pills are very expensive) and spend it on real food or save it up and travel :) We have turned down multiple sponsorship offers from these types of companies for the very same reasons. I hope this helps!

    BTW, if you want advice on how to cut, I will be more than happy to give you some. Always keep your knife sharp, it is a lot easier and safe to have it sharp. It sounds strange but it is true.

    So I just wanted to ask you how you feel about whole wheat pasta or rice pasta. I have been trying to avoid enriched flour products and replace them with whole wheat products which also have a lower glycemic index, so they keep you feeling full for longer. I am also trying not to be obsessive even though I just sounded like it. :)

    Also I wanted to share my morning (or lunchtime) smoothie recipe with you. I put into the blender:
    -1 banana (or a half depending on how hungry I am)[105 cals for 1 banana]
    -a handful of fruit like blueberries or strawberries. [70 cals /cup]
    -1 or 2 leaves of fresh kale (handful of spinach, chard or any other leafy green will work here) [34 cals for 1 c. kale]
    -1/4 cup of raw oatmeal [75 calories - 1/4 c.]
    -1 TBS almond butter [95 calories/TBS]
    -1 TBS flax seed [48 per TBS]
    -1 shake of cinnamon (or to taste)[17 calories/tsp]
    -fill blender half way with orange juice. [120 for 8 oz]
    BLEND

    Makes one big cup, and is 564 calories if you do the biggest portions listed here, but you can always do less than these amounts to cut down. I figured someone would want to know the calories so I listed them here, but I don’t really count calories, I just figure all this stuff is healthy and it is probably the biggest meal I have for the day. I eat raisin bran with my coffee, and a normal dinner, fish and veggies or something like that. Anyway,I love a smoothie, and you can also share it with someone and cut all the cals in half!

    hey zuzana! quick tip for peeling garlic: it goes way faster if you cover the clove with your knife and give it a swift hit with the heel of your hand. the peel will pretty much fall off, and smashing the garlic will release more flavor. Also! Garlic presses are a huge time saver I love them!

    You do not use any supplements? I eat around the same thing you do, according to your diet list on this page, and I found that I am not getting near enough protein in my diet. I am considering a whey protein supplement to boost my protein for health purposes and for muscle recovery. I have a lot of fat to lose, what do you suggest?

    Hi zuana, this looks great i will try this but without the vinager which i don’t like. tips you wanted, when using a knife and it looks like you are using a small french knife, hold the knife in your right hand if your a rightie and hold it near closet to the blade handle DON’T put your pointer finger ( the finger after your thumb ) on top of the blade , instead wrap it around with the blade in between holden the handle , and with your left hand keep your fingers holding the veggies or what your cutting with your four fingers flat against the blade so your fingers are altogether and you put the tip of the blade on the cutting board, then just cut your piece and let it just slide against your fingers that are flat almost like you have a fist. maybe you can look this up on youtube how to use hold a french knife, good luck your workout are great too. i love tomatoes patricia. youtube subsciber prettysam.

    This meal looks so good, I love portobello mushrooms!! Im going to try and follow the basic structure of your diet plan, except for breakfast Ill have the go bananas recipe of yours. Generally for snacks I eat healthy snack bars because I work all day, but I will definitely be eating salads for lunch, and on my days off I like to mix it up with tortillas and pita bread.     I cooked this last night for my boyfriend and my self… it was amazing.. I think maybe next time to add a little protein I will add some home roasted chestnuts as I think it will go well.

    Like I said in my last post I cooked this last night but I think next time I will add some roast chestnuts.. just a few for some good fats and protein. You can get bags of them on the UK supermarkets.

    To cook just cut little crosses into them and stick them on a baking tray into a hot oven about 220c for 20-30 min they will crack so you can then peel them. They taste fab hot fresh from them oven or you can add them to cooking. They go well with cabbage,sprouts and much more. But I am defo gonna give it ago with this meal.

    I want to share a recipe of one of my favorite snacks. It’s super easy to make and super easy to get hooked on :-)

    Raw Chocolate Hazelnut Brownies

    1 cup raw hazelnuts
    1/2 cup raw almonds
    1 to 1 1/2 cups (medjool) dates, pitted
    1/2 cup almond butter
    4 tbsp organic cocoa powder
    3 tbsp shredded coconut

    Place hazelnuts and almonds into food processor fitted with the “S” blade and process until finely ground. Add the pitted dates, raw almond butter, shredded coconut and cocoa powder and process until completely mixed. You can add more or less cocoa powder depending on how rich you would like the brownies. I like to put the batter into a small bag and press it evenly out and then cut it into squares. Refrigerate in a covered container for up to a week.

    I got this recipe of the internet but I think it’s in the recipe book, The Whole Life Nutrition Cookbook: Whole Foods Recipes for Personal and Planetary Health.

    I made this last night for me and my husband. I subbed tomatoes for the bell peppers, and GIRL this was delicious. I too had the same euphoric experience after the first bite. I also cranked up the garlic. This was perfect and will definitely be a repeat. My husband, an officer in the USMC and a big meat-eater, loved it! Keep posting!
