Tasty Snack Attack

Hi guys,

As part of my 2 month challenge I wanted to really start to share with you some of the actual recipes and foods that I am preparing and eating each day. I think that it is important that you guys get to see first hand the types of meals and snacks that I am preparing at home so you can get a good sense about the food and grocery choices that I am making. All of my recipes are quick and easy to make, and they tend to have only a few basic ingredients. We keep our grocery shopping very simple, and we spend 95% of our time in the produce section. I believe that keeping it simple is absolutely key. Cut out as much of the garbage as possible and focus your choices down on foods that support your health and fitness goals.

The meals that I prepare at home are vegetarian. That is what is working for us – you guys can always modify and experiment with adding the meat of your choice (although I wouldn’t advise adding meat to todays recipe – haha). As I have mentioned in other videos, Freddy eats veggie at home and makes the choice to eat meat or not when we eat out. He estimates that this approach has cut down his meat consumption by about 90% a decision that he feels pretty good about for a whole host of reasons.

Today’s recipe is a snack that I just absolutely love. It’s quick, easy and tastes INCREDIBLE. We eat all kinds of different snacks, and I will be sharing them with you as the weeks go by. We are really enjoying making these diet videos, and I hope you guys are enjoying the recipes :)

Just a quick note – for today’s recipe important to pick the right bread. The bread we buy in our local bakery is like some kind of magic delicacy – the mere smell of it makes me go weak in the knees. I actually nicknamed it “cake” even tho it is a regular whole wheat loaf. So for this recipe see if you can go out of your way and pick up some magic bread of your own. While I am giving away extra tips here, I should also mention that the apple is pretty damn key as well. Make sure it is the best darn apple you can find. I know people tend to grate older apples that they don’t want to bite into, but this is not the way to go with this snack. Pick an apple that is sweet, crispy and crunchy. Sniff your apples in the grocery store. Try to bite it when no one is looking and if it’s not up to scratch then quickly put it back on the shelf before anyone sees you. That’s what we do. Ok I’m totally kidding about the last part but it made you think about it no? :)

    that snack looks really good…but what happens if you don’t have a grater? can you just put it in a food processor or blender? would that work? also, can i use fresh ginger? because i don’t have ground ginger..but all in all, it looks like a DELICIOUS snack!

    huh. I’m really, really glad you are posting more about what you’re snaking on. I’ve had the idea that snacks should be really small – one piece of fruit and maybe a very small handful of almonds. But this contained both bread, fruit and a decently large handful of nuts. I’m super excited about the bread. hehe. I’ve been baking my own and it is delicious! I cannot wait to be eating it as snack food as well.
    btw, if anyone is interested in a great recipe for whole grain bread that I’ve been using, just lemme know. I’d be more than willing to share ^.-

    If you don’t have a grater, just make it with thin slices of apple instead! And you can use fresh ginger, just don’t put too much.

    Fantastic diet plan, 5 meals ,3 hours betwen them. Carbohidrates from fruits and vegetables all day (no procesed ) and you add protein, I suppossed ,but why pasta for dinner? It’s your post workout meal when you introduce the carbohidrates or do you make it all nights??

    I just wanted to let you know that it’s been a lil bit less than a week that I started doing your workouts reguarly and I’m loving them!
    Since I’m a beginner I’ve always been kinda intimidated by your workouts but now I’ve become the expert of modifications and I try adapting each of your workouts to my fitness level and I have to say that I’m really enjoying them! Who would have thought! I’ve never really been the sporty kinda girl but doing these kind of exercises is so much different for me! I feel challenged every single time, they are always different and… most importantly, they are fun! I’m not always able to do them perfectly but it’s alla about starting somewhere right?

    Almost forgot… yesterday I made a super healthy and delicious cake using all fresh ingredients and not processed crap, it’s the healthier version of a carrot cake. I’ll make a couple more changes next time I make it to make it even healthier and then if you guys want I could share it with you! I’m sure you are going to love this one!

    I was wondering what are your thoughts on how much protein is needed per day? I know looking at some sites they mention taking 1-1.5g of protein per lb of lean body mass. But looking at your recipes and diet, you seem to eat less than that (but you maintain a lean look with nice defined muscles). Thanks.

    It looks so good. :) I’ve prepare sth like that yet, but i did it with peanut butter- I add it before I’ve made toast. :) I suggest to roast nuts ealier on pan- then there are will be more crunchy and tasty. :)

    Hi guys!!

    Zuz I’ve tried some of your recipes that include apple and they are really delicious. I try to eat them as beakfast, combined with a glass of milk, or as a snack if I crave for something sweet. That way i finally managed to stop eating sweets. What I want to tell you is that I prefer not to peel off the apple but to grind the whole of it. I never peel off fruits such as apples, pears, peaches, no matter if i eat them raw or I use them as an ingredient in a recipe. Of course i wash them very carefully, I put them in a bowl with water and a tablespoon of vinegar, to get rid of dirt and pesticides.
    Thank you for sharing those really tasty recipes, and I’m looking forward for the next one!!!

    Good morning. I like to have something similar to that. The bread toasted with almond butter spread on it. Put sliced apples on top of the butter. Sprinkle with cinnamon. Possibly pour the tiniest bit of pure maple syrup or agave syrup over all of that. It’s out of this world.

    Thank u soooooooooo much Zuzana! This recipe is perfect for breakfast! I usualy prepare toasts with eggs, everything is the same but instead of apple i use fried eggs, one piece of bread- 1 egg. tomorrow i will use ur recipe definitly.

    this snack is totally tasty, i aslo made the other veggie recipe with chick peas twice already. the second time I added 2 tsps of curry powder and red chili flakes. It really kicked it up a notch. I’m not trying to be naggy guys but it saves alot more energy just putting the bread in the toaster then heating up the oven for just a slice of bread, no? I’m all about energy consumption. Thanks for all the great recipes!

    I reckon it would be easier to shoot down to your local supermarket and purchase a grater, they don’t cost that much, I think a food processor will mush the apple into baby food.

    I’m taking time to try and explore all of your site. I have to say that you make me very jealous with all the delicious food recipes on this site – there are lots that I can make for myself, but even more that I can’t because of being unable to eat gluten (it makes me very sick when I do)!

    If you have the time, I would love to see a series on some good foods without gluten – it’s very hard to get enough carbs when most types of pasta and almost all grains are ruled out of your diet. I know if would certainly make an interesting and very difficult diet challenge.

    It would be good with raisins sprinkled in as well.

    I make a vanilla/almond/craisin whole wheat and oatmeal bread that is to really good. It is sooo easy.
    I make a loaf (or muffins) and everyone eats it for breakfast for the next few days.

    1c plain (UNSWEETENED) yogurt
    1c old fashioned oats
    1 1/4 c whole wheat flower
    1/2c raw sugar or honey
    1 egg
    1/3 c chopped dried cranberries (I chop them up so they are more spread out in the bread, it is more flavorful and it doesn’t crumble as much)
    1/3c coconut oil (you could replace with applesauce or oil of your choice but coconut oil is so good for you!)
    1/3 c chopped almonds
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 tbsp vanilla

    mix the oats, yogurt and vanilla together and let it soak while you assemble the rest of the ingredients.
    Place all dry ingredients in one bowl, wet in the other. Give them each a good mix and then slowly incorporate them together.
    Bake in greased muffin pan at 400 degrees F for 12-15 minutes or in a bread pan at 375 for ….. longer. LOL. I don’t know, I don’t time it, I just keep an eye on it;)Until a toothpick or wooden skewer can be inserted and come out clean.
    You can also swap out the vanilla, almond, raisins for raisins, pecans and cinnamon. They are both YUMMO!!

    Hi Zuzana, I would like to share my favourite ultimate bar recipe.

    I love this bars after my workout or afternoon snack with glass of skim milk or coffee.

    2 cups oats
    1 cup flour (your favourite)
    1 tsp bakingn powder
    1 tsp baking soda
    1/4 tsp cinnamon
    2 tbsp ground flaxseed
    1/4 tsp salt
    19 oz can white kidney beans, rinsed and drained
    1/4 cup safflower oil (or your favorite oil)
    1 cup packed brown sugar
    1/2 cup skim milk or soy milk
    1 large egg
    1 tsp vanilla
    1/2 cup chocolate chips (option)
    1/2 cup raisins or dried cranberries
    1/2 cup chopped walnuts or pecans (I mixed with almonds
    and walnuts)

    Instructions;
    Preheat oven 350F
    1.Place oats,beans,oil,sugar,egg vanilla,salt,milk in a food processor and pulse until smooth.
    2.Pour 1. misture into rest of the dry ingredients incl. nuts and raisins.
    3. put parchment paper on the baking sheet (9-13 inches).
    4. Bake 30 minutes.
    5. cool down in the pan before cutting into bars.
    6. Store in the refrige up to two weeks.

    I hope I did not miss anything and hope this recipe can give you some new ideas on your new diet.

    Ummmm, looks yummy.

    You should try my muffin recipie, it’s healthy and tasty.
    My husband and I have one a day with a fruit as a snack and they stay nice and moist for 5 or 6 days and will keep you full for 3 hours.

    1 1/2 cups whole wheat flower (I like ground flax seed and wheat gearm so I replace 1/2 a cup of the flower with 1/4 cup of each)
    1 cup roaled oats
    1/2 cup raw cane sugar (I substitute 1/2 with Stevia)
    Pinch of salt
    1blsp Baking Powder
    1/2 tbsp Cinnamon
    1 egg (if you don’t eat eggs, you can add a second tbsp of baking powder, I only use eggs when I’m baking)
    1 cup almond milk
    1/4 cup grape seed oil (can be substituted with apple sauce, however grape seed oil is a nice oil to bake with)
    1 gratted carrot
    1/2 cup walnuts
    And what ever fresh or dried fruits you like

    Bake at 375 for 20 minutes
    Makes 12 muffins

    I will share this very simple breakfast recipe with you. You mush half a banana with a handfull of oats until it is completely smooth, then you add in cinnamon, raisins, strawberries, blueberries ( basically whatever fruit you have) along with ground flax, and whatever type of nuts you want. It is so delicious and if im really hungry i put some natural chocolate protein powder in it.

    I made this snack right way after seeing this recipe. I always have trouble eating apples, but now it is not. I grated half apples only. I have ground ginger, cinnamon in the cabinet. my husband cooked pork with cinnamon. I never know we can use it for veggie and fruit. this is yummy snack. thank you

    I tried it this morning for breakfast. Delicious, and so easy to make! I’ll definitely be making this often. I didn’t have pecans, so I substituted almond butter. I imagine other kinds of nut butters would work as well, and you don’t have to worry about them falling off the apple :)
    I did notice two things that would make your life easier when making this: squeeze the juice out of the apple (I used a Golden Delicious and had to squeeze out almost half a cup of water over the sink) and use a wider bread so you don’t have to pile the apple quite so high (just cutting the bread at an angle will make the slices wider).     I was just wondering, did you have all of the portion that you prepared in the video as a snack? Or did you guys share it? I’m just trying to figure out how big your different portions are throughout the day, as I’m well on track doing your workouts each day and now I’ve started to focus more on the food as well. I’m quite sure I got the ingredients right (healthy, fresh, lots of veggies and fruits), but I’m not sure about the portions yet.

    Zuzana,
    don’t use olive oil when your cooking, when olive oil is heated it becomes toxic to the body, if you want to use oils for cooking, the best one is raw organic cold pressed coconut oil (also it makes the food taste a lot better!). I’ve been a raw vegan for a little while now and its great to see more people becoming vegetarian and vegan….hopefully you guys will try to be raw in the near future :)

    oh and if you want to try some good raw/vegan food there is a couple good paces downtown!

    That looks good although I would use almond butter and then put the apple on top.
    for lunch I made

    buckwheat noodles with grated cucumbers and scallions and sesame seeds and a sesame soy sauce dressing. you can add a poached egg on top and also some fresh seaweed.

    it sounds weird but it is actually really tasty.

    I also made my own home made carrot ginger dressing using all fresh ingredients. it tastes great over lettuce tomatoes, cucumbers and fresh scallions, you can also eat a large portion if you are feeling super hungry.

    What a great recipe! I modified it a little bit, by using natural almond butter instead of pecans. After I toasted my bread, I spread almond butter on it, then put the grated apple on top of that. Pure heaven!!!!! You could also substitute bananas for the apples….

    I am 14 years old and i have always not had a very good self esteem about my body and have been bad with eating processed food. But from watching your videos and reading your blog, i have been able to live a healthy life style and i have become very comfortable with myself. I like to get exercise and be active now, and i have been going to pilaties and to my gym and trying some of the workout moves posted here on body rock tv!     this looks delicious. You wanted a tip how to make it even tastier, what about to roast the pecans on a pan (dry roas obviously) It will make them crunchier an it the smell will be even more incredible:) Also have you tried dry roasting sunflower seeds? That is my most favourite snack. Slice of cruncy bread with a little bit of butter or anu kind of spread sprinkled ith dry roasted sunflower seeds:) Delicious!

    I’ve found an incredible apple butter (2 kilos of organic apple to make one little 1lb jar, truely delicious, by Eden foods) and love to spread it on top of almond butter. That makes a super fast very yummy snack/breakfast. I’ll have to try it with fresh apples.

    Mmmmm, awesome recipe! I love to try new recipes and it’s great to try the healthy ones. How about sprinkling some ground flax seed on top the next time you make this. Flax seed provides a good amount of essential fatty acids.

    Matt, try quinoa (“keen-wah”). It’s a grain and a good alternative to anything with gluten in it. Zuzanna turned me on to it, as a matter of fact! I cook it and eat it as a hot cereal. I’d imagine that you could put the warm shredded apple with the spices and pecans in it and it’d be good.

    Hey…I understand the lack of gluten free products when it comes to carbs. The easiest way to get gluten free (GF) it to make your own. This site has a lot of GF flour, bread, pizza dough, and even cake mixes (http://www.bobsredmill.com/) Or you can search Bob’s Red Mill. There are only a few differences in making GF products vs regular, and it tends to be cheaper. You can find recipe books at most book stores that specializes in a GF diet.

    It`s looks great, I`m gonna try it.
    I notice that you love ice cream, so I`m gonna share a recipe that`s 100% natural.
    It goes like this:
    Chop in for pieces four bananas, then put them on a plate in vertical position, and into the freezer for about 2 hours, once the banana pieces are frozen put them on a mixer `til they get a creamy soft texture, and it`s ready, natural, and sugar free ice-cream.
    Personally I use the bananas with brown spots on it, `cause they are sweeter.

    Just wanted to thank you so much F&Z for everything you share with us & keeping us all motived. Here is a salad recipe my family enjoys & thought you might like it as well.

    Cold “Stir Fry” Salad
    4c fresh bean sprouts
    3 c fresh spinach, washed, crisped
    2 c cooked rice
    1/3c raisins
    1 green pepper, seeded, chopped
    1 red pepper
    3 ribs celery, chopped
    1c sliced fresh mushrooms
    1/2c chopped green onion
    1 c halved cashews

    Rinse & dry bean sprouts. In large bowl combine all salad ings except cashews. Toss Cover & REfrigerate. Just before serving toss with dressing (recipe below) Garnish with cashews.

    Dressing
    1/4c soya sauce
    1 clove garlic, minced
    1/2 c oil

    In a small bowl comgine dressing ings. Add to salad!
    Enjoy!!

    I love how this recipe is not only vegetarian but it’s also Vegan which is a great advantage for me. I just tried this only when I toast bread I use Organic Smart Balance which gives food a great taste. I didn’t use nuts although I did top it off with a few raisins and it tasted great!     Where did you hear that about the olive oil? I’m just letting you know it’s absolutely not true. Olive oil has a smoking point of 210 degrees celsius (410 degrees fahrenheit), which essentially means that the oil will not be at all altered in the process of cooking and no nutrients are lost. It has such a high smoking point that it can easily withstand such things as, say, frying. It is actually THE most stable fat when heated.

    Can’t imagine where you might have heard that bit of misinformation from.

    I just did the workout you guys’ posted yesterday. I did it again because last night I didn’t give it my all. But tonight seriously I kicked my own ass and it feels great! lol I was pouring sweat … ( I know I know tmi…)For a sandbag since all I had was 20 pound ankle weights I put those inside a cloth lunch box of mine along with one of my 5 pound weights and it did the trick. I cant’ wait to see what other exercises you come up with for using the sandbag… =)

    Another tasty snack is frozen banana chopped with apple chunks and a bit of yogurt or whipped cream with your choice chopped nuts or homemade granola on top. Super delicious especially with the whipped cream creamyness! And frozen banana tastes like ice cream and also adds a great creaminess to smoothies. Organic!

    p.s. I am super interested in your actual portion sizes! I’m sure they fluctuate but a general amount? I am naturally so thin so eating enough and building muscle is actually way harder than just sitting around eating burgers. I have to have a lot of protein to keep my muscle mass so how do you keep definition with what seems like little protein, aside from every body being different of course!

    Matt, have you ever tried pasta made from rice? It’s a great substitute especially if you have a good sauce or with roasted veggies or as a base for pasta salad.

    Sure thing. This recipe is one I originally found on the back of the Roger’s Whole Grain flour I’ve been using. I’ve modified it very slightly to suit my tastes. Anyways, here it is:
    ingredients:
    -1/2 cup warm water
    -1 tsp honey
    -2 tbsp yeast

    Dissolve yeast and honey in warm water and let stand for 10 min

    -3 1/2 cups warm water
    -1/4 cup honey
    -1/2 cup vegetable oil
    -2 eggs, beaten
    -2 tbsp lemon juice
    -10 1/2 – 11 1/2 cups whole grain flour

    Measure water into a large bowl; add honey, oil, eggs, and lemon juice. Mix well. Add yeast mixture and stir. Gradually add 5 cups of flour, stirring well after each. Lend stand 15-20 min. Stir in 4 tsp salt and add another 4-5 cups of flour. Knead dough 15-20 min, adding flour as needed (use personal judgement here: you don’t want the dough sticking to the table and your hands too much, but it shouldn’t be dry and cracked either). Place dough in greased bowl, turning once to grease top. Cover and let rise for 50 min. Punch down and shape into 4 balls. Cover and let rest 20 min. Form into loaves and place in greased loaf pans. Brush tops with oil. Cover and let rise 50-55 min. Bake at 375 F for 30-40 min. Remove and let cool.

    I don’t think I’m exaggerating when I say this usually takes me about 5 hours in total to bake. So if you wanna try it, set aside an afternoon. But keep in mind that I’m a pretty amateur baker, and most of the time is spent waiting for the dough to rise. Anyways, good luck if you decide to try this, and hope you enjoy!

    This looks scrumptuous! Thanks for the sharing :) Your diet plan sounds very much like what I read of the “Raw Crunch Diet” by Kathy Feldman. She was a former fitness model and now her and her hubby make this bar with no processing, only nuts, seeds, and fruit. Very good, I’ve tried! Anyway, they eat fruit for breakfast, a large salad for lunch and a meal of choice for dinner. They have two snacks of the raw crunch bars they designed for the plan. They both are the picture of health and happiness! I think she studied cellular biology and had years of sickness due to the high meat/protein diets of the fitness industry. It was a good, quick read and really opened my eyes as to what I ingest. You guys sound like you have a good idea of what is healthy and what isn’t..love this site and all you all put on it for us! Thanks again and againa and again!!!

    Hey Matt-
    I am also allergic to gluten, and haven’t had wheat bread for several years. There are lots of good gluten-free options for carbs, since the only grains that contain gluten are wheat, barley and rye. Some people also do not eat oats because they find it irritates their GI tract.

    Rice, corn, chick peas, & beans are all gluten-free and really tasty. There are many gluten-free breads and bread mixes on the market, but sometimes it is difficult to find them if you live in a rural area, or one where celiac disease is not common.

    Here is modification of Zuzana’s recipe that does not contain gluten– use GF cornbread instead!

    Then you can put the warmed apples on it, or warmed peaches, plums, pears or berries.

    Unfortunately, coconut oil (and other exotic oils, like palm oil) contains unbelievably huge amount of those bad saturated fat acids. So be careful! Olive oil is good if you don’t heat it too much (max. 180 degrees C.)

    This is a recipe I have been making lately and it is really good!

    What you need:
    1 pound uncooked rigatoni
    1 1/4 cups (6 ounces) pitted manzanilla (or green) olives
    1/2 cup sliced almonds, toasted
    1/2 cup fresh flat-leaf parsley leaves
    1/4 teaspoon freshly ground black pepper
    1 large garlic clove
    2 tablespoons water
    1 teaspoon white wine vinegar
    1/2 cup (2 ounces) grated Asiago cheese

    How to make it:
    Cook pasta according to package directions, omitting salt and fat. Drain pasta, reserving 6 tablespoons cooking liquid.

    Place olives, sliced almonds, flat-leaf parsley leaves, black pepper, and garlic in a food processor; pulse 3 times or until coarsely chopped. With processor on, add 2 tablespoons water and 1 teaspoon vinegar through the food chute, processing until mixture is finely chopped. Combine pasta, 1/4 cup reserved cooking liquid, and olive mixture in a large bowl; toss well. Add enough of remaining 2 tablespoons cooking liquid to make pasta mixture moist, tossing well to coat. Sprinkle with cheese.

    Please, could you share the investigation or the documents which say that heat olive oil is toxic? I would be really surprised if you found it because that it’s totally false.

    I’ve eaten heated olive oil all my life and I’m totally healthy. That it’s simply a mad affirmation.

    You can’t eat burned oil (any kind of oil) because BURNED oil is toxic, but you can eat heated oil perfectly. Millions of people eat it every day. Please, don’t confuse people.

    A great recipe that I made for my lunch today was this:

    1 pita bread
    eggs
    olive oil
    sliced avocado
    salsa
    grated cheese
    salt and pepper

    I put olive oil on a pan and scrambled the eggs then added some salt and pepper. Then I put olive oil on another pan and heated the pita bread up until it was slightly toasted. I opened the pita bread on one half and filled it with the scrambled eggs, a few pieces of sliced avocado, a bit of salsa, and a little grated cheese. This was great because it only needed a little of each ingredient and was small but delicious and filling!!

    I’m trying to start a vegetarian diet but since I don’t live alone and I’m not the main cook in the house, I can’t eat vegetarian all the time.

    I would like to address the “olive oil is bad for you comment”- Olive oil is not toxic. Only when it reaches a high temperature does it change.
    If you bringn it to the point where its smoking when cooking is not a good thing—the oil is decomposing under the extreme heat, and the antioxidants we usually love in olive oil are replaced by free radicals and other dangerous molecules. The smoke itself is also toxic and shouldn’t be breathed.
    So as long as you use it on low to medium heat its perfectly fine.

    Your website inspires me so much! I started on a new diet plan, I liked your idea of eating fruit for breakfast, salad and one home cooked meal, that’s what I am trying to do right now. I also took your advice about eating real food, I went to my local farmer’s market and got so many wonderful fruits and veggies, a lot cheaper than in a grocery store, there were times when I just couldn’t afford to buy fresh produce, I am now making it a priority, you can’t put a price tag on your health.

    HOMEMADE BREAD I ATTEMPTED AND LOVED!
    organic whole wheat flour
    yeast
    organic applesauce
    pinch of salt
    organic milk

    flatten out then roll up and bake
    I have added oatmeal on the outside and sunflower seeds to the dough as well as cinnamon/raisin variations. All amazing and NO butter or sugar in it! yay! You can also make the loaf smaller for more portion sized slices

    This is a great recipe.

    A suggestion would be to warm the apples with some salted butter or even a Tablespoon of coconut oil.

    This would be for people with faster metabolisms that need more fat.

    For toasting bread, I would suggest anywhere from 375-450F, depending on how fast you want/need it to toast. Also, just check the bread every few minutes til it reaches desired toastiness :) Since everyone likes different things, there isn’t an exact time limit

    This recipe really does look delicious, the only part that worries me is the bread. I just HAVE to share with you my favourite delicious snack recipe which is totally healthy, with no fat or sugar with oats that are great for you. The ingredients are:
    2 cups oats
    6 crushed Weeta Bix
    1/2 cup sultanas
    60g dried apricots, chopped
    1 cup 100% orange juice
    1/3 cup honey
    2 egg whites
    Combine the juice with the honey in a pan over medium heat until it is like a syrup, meanwhile combine all the other ingredients together and mix well. Then add the syrup so it sticks together and bake until golden in preheated oven. I usually make them into bars and carry them around with me when I go to the uni. They very much look like the bought ones except much healthy.
    It’s very delicious with grinded apples too or any other dried fruit you like. You can add more egg whites for it to have more proteins or exclude them. Last time I added wheat bran and sunflower seeds. Delish! Hope you like it!
