BodyRocker Pantelis – Spinach Mango Salad Recipe

Hello Zuzana, Freddy and all bodyrockers (Hi Helena!!!!).

I’m Pantelis from Greece, 44 years old, father of 3…

I’m following the training schedule of Bodyrock the last 6 months, it is a very interesting, enjoyable activity. It is not the first time I’m in some kind of sport activity, I have participated in 2 marathons in the past (2008, 2009 best time 4h5m), 4 years of boxing, 3 years of kick box, MTB, and many more. The problem is that I’m not very dedicated in healthy diet, unfortunately I like sweets and I cannot resist!! My bodyfat percentage is 18% and at this number there is no way to see a 6pack (snif!!!). Therefore I’m trying to make more intense training, I’m cycling 200 km/week, and beside Zuzana’s workouts (I do them 4 times a week), I’m doing some other exercises for about 4 hours a week.

Anyway here I’m posting a recipe of a salad, a very healthy turbo salad with spinach and mango

SPINACH SALAD WITH MANGO…

You will need:

400-450 gr. Spinach

1 cup chopped fresh onions

¼ cup hazelnuts, grinded

¼ cup nuts, grided

½ mango cut in small cubes

1+1/2 mango turned to pulp with a grinder or blender

3 spoons of olive oil

2 spoons of balsamic vinegar

some salt and pepper

Wash and chop the spinach, put it in a salad bowl. Add the onions, the hazelnuts, the nuts and the mango cubes. Stir well.

Prepare the dressing with the mango pulp, the olive oil, the vinegar, salt pepper and stir it good. Add the dressing to the spinach and mix.

Eat it!!!

     to me it happens the same because i love sugar and i can´t let it and i make more sports, i ride on bicycle  or swwim or walk all kind of sport can i do because i need to burn fat and  ist the only way to do it

    i have the same problem – i struggle quite a lot to keep up with the diet challenges :)

     I am with you in this one, it is so hard not to eat something sweet and it is very frustrating I am not able to reach my goal in fitness. My fat % is something around 25 (PLOP!) hehe. I do the workouts almost everyday or 6 times a week, sometimes I add skipping rope or bike, but I can only manage to do 30 KM, maybe 40. I am exhausted I just cannot give more.

    Anyway you seem very dedicated and I hope you reach your goals soon, we have to keep on trying anyways.

    p.s. I also do not want to sound like I am eating cookies or sweet all day through ok? Just wanted to make that clear XD

     I actually made something like this dish for my breakfast this morning. I mixed spinach, cubed magoes, olive oil and basamic vinegar together. I had this salad with my egg whites scrambled and it was so yummy :)
