Delicious & Healthy Pizza Recipe

Hi BodyRockers,

It’s been a while since we have shared a recipe with you guys, and I thought you might enjoy what Freddy and I had for lunch today. This recipe is light and quick and requires only a few basic ingredients. If you love pizza like we do, but are looking for a healthier alternative give this recipe a try. You can experiment with different ingredients and add your own twist. Let us know what you think in the comments below.


Zuzana & Freddy


4 tomatoes, 4 large portobello mushrooms, 4 cloves of garlic, lemon, 1 leek, 1 onion, fresh basil, parmigiano reggiano cheese, fresh parsley, olive oil, salt.

Heat up about 2 table spoons of olive oil.

Chop the onion.

Stir the onion until it’s slightly brown.

Dice up the tomatoes.

Chop the garlic.

Chop the leek.

Add the tomatoes, garlic,leek, and pinch of salt to the onions. Saute the ingredients until the tomatoes are soft.

Squeeze about 1 table spoon of fresh lemon juice over the ingredients.

Add about 5 leaves of chopped fresh basil.

Spray olive oil on a baking sheet and place the mushrooms on the sheet with the bottom side up.

Add the mixed ingredients from the sauce pan into each mushroom and top with grated parmegiano cheese. Place the baking sheet into the preheated oven and bake for 12 minutes at 400F

Sprinkle with fresh chopped parsley. Ready to serve :)

    This looks great, I just wished I wouldn’t have scrolled down to see all the pro microwave comments.If you feel comfortable about using one thats great,but if there is anything in the back of your head that makes you wonder, I would listen to it.Sometimes we just have to listen to our gut,no matter how much scientific evidence there is.

    I love the idea of using mushroom caps as the pizza crust- very creative!  I’m on a gluten free and vegan diet and am always looking for ways to modify more traditional dishes.  Just omit the cheese or replace it with a vegan option and I have dinner!

    I literally just made and ate this. DELICIOUS! For my own taste, I added more basil and garlic than what this recipe called for and I topped it with a slice of provolone cheese before putting it in the oven. I will definitely be making this one again! thanks for the recipe!

    This turned out really well, but I think I added a little too much cheese.  The taste was a bit overpowering.  Definitely going to try this one again.

    I make this! without the leeks! Still looks so yummy this way and way more veggies then what I use! I wonder how many calories this is!

    Yum, so I remembered seeing this the other day…and when I went shopping, I forgot to re-look at the ingredients, so I only ended up with a portabella shroom & tomatoes, haha.  I scrounged around & also found a zucchini in my fridge, so I ended up just sauteing that with the tomatoes, some onion powder, salt, pepper, basil, white wine vinegar & some seasoned balsamic olive oil mix thing that i have Then I added some monterey jack cheese with ~ 5 mins left of the oven time.  OMG, sooooo delicious!!!

    The point is…get creative :)  You could probably do a million variations of this!

    This is not expensive. I shelled out and got some kind of expensive fresh mozzarella (I hate parmesan) but you can get a cheaper kind for $2 if you want that. I also skipped out on the leek and since I already had arugula, I used that instead of basil.

    I couldn’t believe how good these were! I’ve never been into portobellos but cooking them this way made them taste so meaty and substantial, and they really held up under all these juicey veggies. I also have never sauteed tomatoes before, but tomatoes + garlic + greens + onion is about to be my new summer staple. I can’t wait to put that on EVERYTHING. 

    I wouldn’t say they would satisfy my craving for pizza, but they are soooooooo good!

    i tried my own variation of this mushroom-pizza themed dish (with the addition of sundried tomatoes and blue cheese) and it was delicious. I think this recipe is going to become a regular low carb side dish in my cooking repertoire. It was quick, easy and very tasty.

    Um yeah, since the radiation of the microwave has about the same energy as nuclear radiation.. right.. that’s why microwaves are known for being used as weapons and energy source.
    actually concerning the energy it is more dangerous to lay your food in the sun, the wavelength of sun has more energy than microwaves and is therefore able to activate more degrees of freedoms (what you call “nuking” your food) in the food. nevertheless it’s harmless, right? ;)

Last night I made this, but instead of mushrooms, I used red and yellow peppers and instead of leek, I put extra onion. It was still very tasty, but I cannot wait until I live on my own and have control over the grocery shopping.

    This dish is in the oven right now. My mushrooms don’t look as deep as the picture. I also didn’t have leek, but I used yellow pepper. We’ll see how it tastes in 6 minutes….

    mmm, that looks good!  I’d probably sub out the parmesan for some cheezy sprinkle (nutritional yeast and cashews, food-processed into chunks with a pinch of salt), but I love the idea!  Thanks for sharing :)

    I make this for my anytime pizza alternative all the time :) If I want a post workout pizza I just put the same ingredients on a Gluten Free brown rice tortilla wrap. Makes for a crunchy, super thing crust, YUM!

    Great light summer lunch!  I’m gonna make this but without the cheese because I’m vegan. Maybe throw in some artichokes and sundried tomatoes to make up for some flavor since I’m missing the yummy cheese.  Thanks:)

    A couple years ago, I would not have been happy about the mushroom-based-ness of this recipe. But to my new and improved self, this looks freaking delish! Will have to give it a try.

    Before I started to BodyRock on the reggs, I would always manage to exercise OR eat well, but never simultaneously. Now that I’ve mastered the art of balancing both (I can’t believe how long I tried to slack my way through what I thought was “healthiness”), I’ve become very accustomed to daily activity. I feel bad when I don’t exercise, and that’s a fact.

    However, I still find the diet half of the equation to be the hardest part. And while I know you guys are sooo very devoted to our exercise routines (and we’re sooo immensely grateful for that), I feel as if more of a focus on diet is required. But I also know that this focus on diet is MY responsibility, and no one else’s.

    A lot of the recipes can be BodyRock-ified (with milk alternatives, an addition of flax/chia seeds, etc). But the basic recipes are fantabulous.

    Who says you can’t trust a skinny chef??

    I love using veggies as “dishes” too…for breakfast, while I am getting ready to run out the door I whisk up egg whites, broccoli and spices…pour it into half of a fresh red pepper (my little boat) and pop it in the microwave.  I can eat this while I drive to work even….and no dirty dishes!!

        Sometimes they do make a mess! Cover with a paper towel while in the microwave and I let it cool off a bit, it continues cooking for a little while!  I leave for work at 6:00 in the morning and I do the same with whole cut oats and egg whites and craisins. Microwave it and run.

        i make my eggs everyone morning in the microwave.  I spray olive oil in a microwavable container, add veggies, 2 eggs with some garlic powder and Mrs. Dash’s Garlic and Herb.  1:30min, then flip, and 1min more.  soooo yummy!

    Great idea to use mushrooms instead of bread! I would also add some greens, like arugula, it tastes amazing. The only frustrating thing is that I would never find such big mushrooms in our town ((

    Wahou. First I thought this was normal pizza pasta; I wondered “oh my GOD” what, there is a healthy pizza recipe and I started salivating! Then I realized the pasta are mushrooms. Guess, what? This is so creative. I love cooking and never thought about it. A millions thanks to Zuzanna and Freddy and all the Body Rockers’contributions for enlarging the BR community’s healthy eating possibilities! For someone like me always being always hungry this is GOOD. :-)

    Yummy, I love portobello mushrooms for their very rich, ‘meaty’ texture. However, I seem to have issue with things being called what they’re not (that’s not a critique, just personal preference). I’d rather call this a stuffed portobello mushroom, as pizza is a pizza… usually ‘real’ pizza can be very healthy, me and my other half make our own pizza dough and top it up with what we like and it turns our beautiful AND healthy!

      I wouldn’t get too pedantic;) It’s a pizza flavoured dish for those of us who can’t eat gluten because of sensitivities and/or choose to keep our diets free of processed wheat like flour for health reasons.

    Aaaahhh…It looks soooo yummy! I have to figure out an oven free version. For five years already I have been living in uni dormitories with only a basic hot plate and Im missing oven so much. I love baked pasta and meat and its also healthier to use oven than fry everything. Oh well… one day I will finally graduate and oven will be the reward for my first real salary. :))

    I already know I would  like this as I grill portobello mushrooms that have been marinated in olive oil, garlic, oregano, salt, pepper and chilli powder with a dash of lemon, they taste great just like that. Never thought of using the base as a pizza. Thanks for another great recipe!!! I will give this a go soon…

    Wow! Looks delicious! I must have that kind of pizza. I love pizza too but only the one I made. I’m hesitant to get pizza outside because of too much oil… but portobello mushroom is kind of expensive… but I really love to do this pizza… I must have it, no matter what.
