Spicy Peanut Sauce with Shrimps

Hi BodyRockers,

I have one of the most delicious meals for you today – try not to faint when you taste it. It’s made up of healthy super foods so if you keep your portions under control, then you can call it a healthy meal :) Freddy and I both love it so I am sure that you will too!

You will need the following ingredients:

cooked and peeled shrimps (about 1 bowl), brown rice (about half a bowl), 1 large red onion, 1 orange, 6 cloves of garlic, 2 tbsp of fresh ginger, extra virgin olive oil, honey (about 2 tblsp), crunchy peanut butter (about 4 tblsp), chilli powder (1/2 tsp), cayenne pepper (1/2 tsp), salt, fresh  basil.

Let’s start with the rice.

Put it in a pot with water and boil according to the instructions on the package (it will take about 30 minutes). You can also add a little piece of butter (up to you).

Take the beautiful and sweet large red onion.

Try to chop it without crying.I learned already that chewing a gum helps to avoid the tears and saves your mascara from smudging :)

Heat up about 2 tblsp of olive oil in a medium size sauce pan.

Add the chopped onion to the sauce pan, but not all of it – only 2/3. You will need the remaining 1/3 for the spicy sauce. Keep it on a medium heat.

Chop 5 cloves of garlic into tiny pieces.

Add them to the sauce pan and saute until the onion starts turning slightly brown.

Take the bowl of cooked, peeled, frozen shrimps.

Add the shrimps into the pan and mix it in with the onion and garlic. Saute for another few minutes until the shrimps are done. They are already cooked so just make sure that they are hot before you turn off the heat.

Take the remaining onion and put it into blender.

You will need a piece of fresh ginger that is about the size of 2 tblsp.

Add the ginger and the remaining 1 clove of garlic into the blender. Add about 2 to 3 tblsp of water and turn the blender on for a few seconds. It doesn’t have to be complete mush – let it have some texture.

Add 4 large tblsp of peanut butter and add it to the blender.

Squeeze about 2 tblsp of honey out of the cute bear right into the blender.

1/2 tsp of chilli powder or the kind of red chille pepper (in the middle) and 1/2 tsp of cayenne pepper.

Add it to the blender.

Now you will need 4 to 5 leaves of fresh basil.

Add it to the blender.

The last ingredient is freshly squeezed orange juice. 1/2 an orange is enough and you can use the other half as a garnish.

Turn the blender on again for just a few seconds – the basil should be visible in the mixture and the peanut butter should remain crunchy.

Mix the spicy peanut sauce in the sauce pan with the shrimps and add salt according to your own taste.

It’s done! Now you just have to garnish your meal with fresh basil and orange and serve.

    I don’t like seafood and I like peanut butter but not cooked (except cookies) or in Thai food. :( but I’m thinking I could make this with some chx breast and just don’t add in the peanut butter to the sauce..hmm I will have to brainstorm on this.. seems the p.nut butter is the base for the sauce.. any suggestions?

    PS:you should put the onions in the fridge for some hours before you cut them ..that way slows the reaction when cutting the onion and changes the chemistry inside of it.. then you wouldn’t cry…

Everything recipe on the site is delicious, the site is beautifully done and well written. The spiced coconut spinach on the site is the best spinach meal I’ve eaten ever. I make it at least once a month.

    run the peeled onion under water for a while…no tears! I wear contacts, so trust me avoiding the burn is of top priority :)

      does that honestly work? Do you have to breath through your mouth as well cause I find that it gets up my nose and I not only cry but have trouble seeing and my nose is running like crazy. If I blow it then I taste the onion so I have to breath through my mouth.  :D

        Yup, it’s aways worked for me. I suppose looking at the above comments the only 100% safe way to chop onions is to first rinse under hot water while wearing ski goggles and to have a couple of matchsticks in your mouth (and a slice of bread, but as we’re conscious of what we’re eating lets make sure its wholemeal). Oh, and not to breath.
        I think I’ll get the fiance to chop the onions from now on!

    you can also cut the onion in half and wash it under hot water and squeeze them so that slippery thing (what makes you cry) comes out. It works for me :)

    i find if you rinse the onion under water, the vegetable will lose some of its flavor… so i find the best way to chop onion is to cut it in half, then put it in a bowl covered with plastic rap and leave it in the fridge for 10-30 minutes… this works like a charm because once you cut the onion in half, the part of the onion that releases crying vapour will start to dispense… so by the time you return to it, you cry less :)  that’s what works best for me.  Hope it works for everyone else~

    I find holding an upside down tea spoon in my mouth helps.

    I’m a support worker for autistic adults and we have to lock the kitchen door because one of the ladies is constantly trying to get into the kitchen. One morning I was chopping onions for Sunday dinner when the door rattles for the five hundreth time. I’d had enough, so I stomp over to the door, spoon in mouth, knife in hand and wrench open the door and shout at the service user to go and sit down.

    At least that what it was in my head, What I actually said was “MMMMRPH! MMMMMRPH! UMAPH!” while waving a knife in the direction of the living room.

    I’ve never seen this particular client move so fast in the year I’ve been there.

    When I tasted the sauce after blending, I’ll admit it wasn’t quite what I was expecting, but a dash more orange juice then heated through with the shrimps and onions, and I can confirm this is delicious – I only wish I’d made more of it!

    This recipe sounds awesome! I’ll have to substitute the shrimp for scallops (allergic to shrimp), but I think it will work out well. :)
