I hope that you are having a great day and that you are ready to try a new recipe well it’s not exactly new, but it is new for me. I got this recipe from a friend of mine who likes to eat light and healthy just like us and I was very pleasantly surprised how good this Gazpacho turned out. I made it for lunch today and since then I went to the fridge 2 more times for extra portions. There is still a little bit left because I mixed it twice with brown rice. The great thing about this soup is that you eat it cold. This way you can keep it in the fridge and take a portion out whenever you want and not worry about heating it up. It’s the most convenient soup I have ever made.
Here are the ingredients:
1 bowl of frozen cooked shrimps, extra virgin olive oil, honey, 1 medium size red pepper, 3 medium size tomatoes, 1/2 cucumber, 1 red onion, 7 cloves of garlic, fresh basil, red chilli pepper (or chilli powder), salt, pepper
Start by heating up about 2 tblsp of olive oil in a medium size pan.
Take the big chef knife and red onion.
First cut off about 1/3 of the onion and put it aside (that piece is going to a blender later) chop the remaining 2/3 of onion and saute until it turns slightly brown.
Add the frozen cooked shrimps to the pan and saute until the shrimps are not frozen anymore.
Add the chopped garlic to the pan and saute for 2-3 more minutes.
Add about 2 tblsp of honey.
1/4 to 1/2 tsp of chilli powder (depends on how spicy you want it to be), mix it all well and turn the heat off.
Take all the fresh veggies including the remaining 1/3 of onion and about 8 basil leaves.
Put it all into a blender, turn it on, close your eyes for a few seconds.
Open your eyes and check the consistency. It should be very smooth. Put it in a bowl and mix it with the shrimps.
A little tip for all of you who don’t have or don’t like shrimps in this recipe: you can get your protein from the protein powder that I use. It’s a tiny scoop of a pure protein, it doesn’t have any flavour and it’s good for you. You can add it to any meal or drink. You won’t taste the difference I promise. It’s a solution when you don’t have access to a regular food that contains protein (like the shrimps, chicken, egg whites, etc.)
Put on plate and try not to inhale it – savour it. Remember it’s not a race it’s a lunch (or dinner).
Or both, because you will have some leftovers. In that case use your tupperware and hide it in the fridge. Hide it well if you are not living alone.
