Chicken in Ginger Carrot Sauce

Hi BodyRockers,

I was originally planning on posting a new recipe every day, but that somehow didn’t work out :) however I have an amazing recipe for you guys today that I did on wednesday. It’s really super easy to make, so don’t feel intimidated and give it a try at home even if it’s your first time cooking.

Ingredients:

5 cups of baby carrots, 1/2 cup of roughly chopped ginger, 2 white onions (yellow onions are ok as well), 1 orange, 1 can of coconut milk, 2 cups of chicken broth, extra virgin olive oil, cumin, cinnamon, nutmeg, salt, pepper and…

…chicken breasts (I used 5 pieces). Start by cutting the breasts into cubes and season them with salt and pepper.

Heat up about 2 tblsp of olive oil in a pot and add the chicken pieces. Saute until the chicken is golden and throughly cooked. Set aside, cover with a lid.

Chop roughly the 2 onions.

Peel the ginger and chop into small pieces. You should have 1/2 of a cup.

Add the onions and ginger into the pot and saute until the onions start to turn slightly brown.

Add about 1tsp of cinnamon and 1tsp of cumin and mix it well.

Now you will need 2 cups of chicken broth. There are all kinds of chicken broth that you can buy, I use the one that you have to mix with hot water.

Pour the chicken broth into the pot and stir for about a minute.

Take 5 cups of baby carrots…

…and chop them into small pieces.

Add the carrots into the pot and cook until they’re soft.

Once the carrots are cooked, add 1 can of coconut milk, mix it all well, turn off the heat and set aside.

Peel the orange and chop it into smaller pieces. Add it to the pot. Once the mixture in the pot cools down a little, you can use the food processor and make a puree.

Add the chicken into the pot, and seson with salt and pepper according to your own taste.

I added 2 tblsp of sour cream at the end just to give it really smooth flavour. I noticed that some of you guys were dissapointed to see that I use fatty sour cream and cheeses in my recipes, but I do that for 2 reasons:

1) I love it :)

2) If I didn’t eat any fat, I would have no fat to burn during my workouts.

The key is to never binge or over eat. That’s my rules anyways.

I garnished my meal with chopped green onions and a dash of nutmeg.

It looks so beautiful!

I ate my first portion just like this, but I made a basmati rice as a side dish for the dinner.

    I think its kind of funny that you are giving recipes of what you are eating and people are trying to change them to be less fattening!  yet they kept asking you what you eat to get so lean!  ha! ha! ha!

      Yeah I would love to do a coffee talk. I am just trying to figure out how to make videos in a a different way then using my iphone. Freddy knows everything about video, but I have no clue so it will take some time to figure things out.

        Hi Zuzka,

        Get a girlfriend or a student at a college who knows these things to help by being the camera woman.  You can feed them in exchange for the favor.  We need to see you!  Not food!  Okay, that’s not totally true as it’s nice to drool over your pictures.  No nasty remakes please! :-) I only have pure and wholesome thoughts! O 8-)

          Great ideas here already. If you have a compact camera, it might have a video function on it – it probably won’t be quite the same quality as a proper video camera but we won’t mind at all :0)

        Like everyone else suggested, get yourself a digital camera with a video record feature on it, if you don’t already have one, and a cheap tripod to hold it up. Perfect solution.

    I’m making this tonight! I also think it’s funny when people tell you you should cook differently. You obviously know what you are doing.

    I like to cook large batches & freeze portioned meals, but not all things do well with that. Zuzana, have you ever frozen the extra servings of this meal?

    Gees, I hope you are keeping to a healthy portioning and not eating all this food yourself.

    Soo true! I sometimes binge and overeat. I hate it. It’s a problem that I can’t seem to resolve. It always happens when I smoke pot, wich is about 2-3 times per week. Then the next day I do a lot of exercise and eat little. I know it’s not right, it’s a problem. I have to work on being able to say no to pot. Oh dear.

    Agree! We need healthy fat in our diet. Fat free/low fat aren’t necessarily good for you. Besides our body could burn fat as energy.

      I would volunteer to do it if she would let me!  Run the camera that is…

      Healthy fat is not a problem as we need it.  I was finding it hard to keep weight off the last few months and was slowly gaining weight.  So I tried several things including reducing my food intake and then went thru the brother to see how many calories I was eating…it was about 1100 calories a day at the point!  Not good!!!  I almost double my intake and added more fats.  I’m back at losing weight slowly…  The body is an amazing thing and it uses fats and they do taste good!  Somebody smart said that once… :-)

          Hi Мария Давлеева,

          What I did was read the packaging and figure out my portion eaten on those things that had that sort of information and went to caloric counter on google and looked up on various charts or calculators to figure about how many calories things like a carrot or a apple is.  Not easy as the size matters and most don’t go with weight, but something less quantitative like “a small apple”.  I wouldn’t normally do this as it takes about as much time to figure how many calories you’re eating as making the food and eating it does. 

          I like how Zuzka does it.  :-)

          But, maybe someone who does count all the time can tell us of any short cuts or rules of thumb that would help.

            thanks for the answer. I know approximately how many calories are in some products but think that cooked meal contains different calories than the raw products do. but I’ll try to calculate my best)))

        Oh – me too, i *love* her photography. But maybe a friend (Chris..?) could get behind a video camera for some of these recipes too. That’d be the best of BOTH worlds! :)
        Coconut oil = LOVE it! So healthy, so yummy. It’s a gift from the heavens. While the fact that it’s a saturated fat scares some people. it’s a medium chain triglyceride, which the body uses much differently that the long-chain fats in other oils.         I also love the way it tastes and always lick the spoon when I cook with it! :P Go coconuts! :)

        The new images for the old exercises are self portraits.  It takes a timer of some sort (usually the one in the camera) and a tripod.  I think what Zuzka is hesitant about doing is the editing not the shooting.  But, it would be nice to have a camera person as the images can be more dynamic.

    Hmmmm….another yummy looking dish!  And….I believe that I have all these ingredients on hand…..I’ll definitely have to try this one! 
    I made the garlic meatball dish…..and it was very delicious….very garlicky…..almost to the point of rather spicy.  It was really good though!  I put the parmesan cheese in the sauce….however, I just put the sour cream on my portion (the rest of my family is not a big fan of sour cream in the sauce)…..then  when I served mine up too….I put the sauce on a nice ‘bed’ of spinach…..yum!
    Another thing I wanted to add….I’ve been doing ONLY BodyRock.tv workouts exclusively since February….just about every day….other than the occasional day off….anyways, I just wanted to say a BIG HUGE THANK YOU to Zuz and Freddy…..as tonight I decided to go for a run (which I haven’t been able to do for awhile…..for different reasons)…..anyways, I’m not sure how long a distance I went….but I ran at a quite steady pace without feeling like I was dragging my feet (and no stumbles)…..for about 20-25 minutes.  And, honestly….I wasn’t winded at all and I had enough energy that I could have gone around again (figured I’d best not since it was getting on to 10pm)….unbelievable!!!!!  I LOVE BODYROCKING……even though the workouts kick my butt…..they really prepare you for everyday functional movements/activities!!!!!

    This recipe seems really good !! I never eat or cook with ginger. But this recipe tempted me so much !!

    He hates cream, milk, chocolate milk, yoghurt, grrrrrr.
    Im sure he will be ok with the coconut milk, the other day he tried it and he seemed ok.
     I know!    at the end when my bowl is served I will add the sourcream, buahahaha.

      Mily! I have the same problem with my boyfriend, but I can get him to try stuff.. All you need to do is make it while he’s not around, get him to try it and don’t tell him whats in it unless he asks! :D

    you shared this recipe a while back but it is so awesome I’m so glad you shared it again because it is so wonderful. I have started to use it when I feel pressed to impress the guests. (I happen to live in a tourist town and there lots of chefs it is very intimidating at times) but I had to share that it is the most happy food a person can create  :)

    P.S. - if anyone is a ginger lover like me, try a homemade lemon-ginger tea.  Dice up or shred a small heap of fresh ginger (1 tbsp +), juice 1/2 lemon and add in a cup with honey to taste after pouring in boiling water.  Keep a spoon handy to eat all that wonderful ginger as you drink up.

    I just made this and it’s DELICIOUS!  However–I used about 2 lbs of chicken and I only needed half the amount of sauce, so plan accordingly! This makes A LOT, but I’m looking forward to eating the sauce tomorrow with more chicken, or even as a soup.

    I did it but I didn’t use enough carrots so it wasn’t as thick as it was supposed to be :(. It was still tasty and I’m taking it to work as a ginger carrot chicken soup/stew!

        Thanks!  I got the idea from Jos only I didn’t have a fresh pumpkin and a pressure cooker.  Also, I bought 2 bags of baby carrots from the grocery store and when I got home they were no where to be found lol.  I hate when that happens haha!  I already had the chicken cooked and onion and ginger when I was like, “Ok, soooo where are my carrots ?”  I panicked and then I saw the can of raw organic pumpkin in my cupboard. Aha moment.  It also made the cooking time quicker since I didn’t have to boil the carrrots til soft.  Let us know how you liked it.  Thanks for the idea Jos!  You’re a savior!

          Jos is a pretty good cook herself and squash is a really good veggie that lots of recipes could use.  I also liked your use of the Pumpkin as a substitution.  Did you ever find the carrots?

    You would like this recipe I bet. I like some of the substitutions I read above. I did everything almost to the book except I used LIGHT coconut milk… it still has fat just not as much. I almost forgot to add it entirely. It still tasted good though.

    I haven’t tried the meatballs yet! Next I’m going to make the “cookies”.

    Just made this – full amount of ingredients, except the chicken (used two chicken breasts, for me and the boyf) and there’s tonnes of sauce, so I’m going to freeze it for lunches as a soup… oh, and it is really tasty! Thank you for helping me eat so well this week – I’ve had your meatballs and spicy peanut shrimps this week and it’s all been a delight! Since I have a big bag of shrimps in the freezer, it’ll be gazpacho next. Please keep up these fab recipes!

    I love that you include cheese and sour cream in your recipes, it just proves that you don’t have to survive on just rabbit food to look like you do. Plus I couldn’t give up cheese it’s too yummy xxx

    Hi elizabeth williams, 

    Unless you’re allergic to onions and garlic try them.  Just like many foods they are good for you and taste good in the recipes, but are sometimes an acquired taste.  Trust us and try them! :-)  Leeks are related to garlic and onion and are in the family Amaryllidaceae.  They are a bit like giant green onions.  They taste very good in all the recipes Zuzka has offered up that I’ve made.  She is one good cook!

    I made this!  Next time I think I will cut the recipe in half as my pans were almost over whelmed the volume of sauce!  It tastes pretty good and I will make this gain, but not soon as I have at least a weeks worth now! :-)  BTW, it should read season to taste not seson…

    This was DELICIOUS!!  I will make this again.  I was out of oranges, so I used 1 lemon (juiced) & ~ 1 tsp of brown sugar instead of an orange.  When my husband saw this unknown orange stuff ontop of rice, I could tell he was apprehensive.  He ate all of it, & said he’s like if I made it again.  :)  I only made 1/2 of this recipie, & I wish I had made the full batch.  Thanks Zuzana!

    I made this and the ginger was a tad bit strong, arso strong we had a hard time getting it down and had to throw most of it in the garbage rats! I’ll use about half next time around, or maybe just two tablespoons only, otherwise, it was delicious as always!
