Healthy Yummy Pancakes Recipe

Hi Zuzka and all body rockers,

this weekend i made these delecious and yet so healthy pancakes. I love such healthy, easy and clean recipes. I found lots of recipes on-line but modified them to make my own. There is always no harm in trying and i was mesmerised with the outcome  :)


1/2 cup cottage cheese ( I used 1 small pack)

1/2 cup oats

2 eggs



coconut oil for greasing pan

For the toppings you can be creative with fruit / nuts / honey / yoghurt. I used frozen berries. Warmed them up in a sauce pen to get the juices out :-)


Put the oats in a food processor and grind until powdery. When oats are powdered add in the cottage cheese, 2 eggs, cinnamon and some honey. Mix thoroughly with food processor.

Make the batter in a bowl so that it can be easilly handeled. Heat non stick pan and add some coconut oil. When pan is hot, use a dipper/punch spoon to take some of the batter and pour it on the pan.

I did’nt need to make it round because as the batter fell it formed a circle.

When you see bubbels forming up from all sides of the circle you can turn it over to cook from the other side. Check them out so that they don’t burn. Will take only some seconds.

I served them with warmed up frozen berries. Made out 4 but could have easily made 5 or 6 smaller ones.

    Um, Im so sorry to say that I did NOT like these at all. I’m going to try again in a minute, but YUCK! Maybe it’s because I used Irish Style Oats, and they didn’t make a FINE powder.??? Also, I didn’t like the heated up frozen fruit (mixed berries), I kinda thought that maybe it was that, I don’t know. I’m going to put heated peaches on them this time. I’ll let you know. Oh, and I’m using Old Fashioned Oats, too….

    I just made these… they were FANTASTIC!!!

    I used wheat oats instead of regular and threw it all together in my blender. The mix wasn’t as smooth as it was maybe supposed to be, but it didn’t seem to make much difference. Oh, and instead of greasing the pan with coconut oil, I just used the PAM butter-flavor, no-stick, non-fat spray. It really helped to give them that buttery griddle taste with no extra calories :)

    O man!!!  I just made these and they were YUMMY (and this is coming from some one who usually hates pancakes because they’re not filling enough).  I made a couple of changes to mine.  I added 1/2 tsp of baking powder and just scant 1/2 tsp of baking soda.  This makes any cakey-like thing lighter and gives it a bit of zing.  I also (again, because pancakes usually aren’t filling enough for me) added a half scoop of my flavourless whey protein isolate.  It was awesome!!!  Thanks for sharing this wonderful recipe w us!!!

    I use 2 carb protein powder, egg whites, & baking powder for my ” flour “  works wonderful & I add Agave to sweeten – low impact low glycemic- its yummy

    I also have a MS in nutrition… I don’t see a problem with using coconut oil for greasing a pan… know what I mean :)

    You should be eating carbs everyday.  If you go back through food and diet videos (yes it takes some time)  Zuzanna has gone over lots of info on how to include carbs in an active persons diet and still build muscle and loose fat.

    You can also try 1/2 cup rolled oats soaked in 1/4 cup hot water for 10 minutes, then mix in 1/2 a ripe banana, mashed coarsely and cinnamon (about a teaspoon is what I like).  Then add 3 eggs well beaten (or only use egg white if you like).  Cook on medium/low heat in no stick pan until brown, flip and finish.  Makes two medium sized pancakes.  I eat with 1/2 tsp butter on each one as a treat.  Yum!

    Ok, I made these and it’s true, they were delicious!  I normally make pancakes with oatmeal, banana, cinnamon and eggs, which I really like also.  I really missed the banana flavor so next time I might decrease the cottage cheese slightly so I can add 1/2 a banana.  I don’t use oil, I use a non stick or well season pan.

    Hi everyone,

    I should try this i think.. Have some problems lately with eating.. Do not eat a lot, but do eat a lot of chocolate.. This because of some problems, set backs, so not feeling so great stuff… So the chocolate gives some comfort.. I really want to stop doing this.. but that’s hard.. Help…

    My pancakes don’t actually look good (since they’re pretty dark, like burnt – but they’re not!) but really taste delicious! I used spelts instead of oats, added some baking and protein powder and two spoons of coconut milk :D Usually pancakes don’t agree with me because they tend to be sooooo greasy but this version (I only used a tiny amount of coconut oil for greasing the pan) seems to be great :D :D :D

    Saturated fat is not the enemy! We have been lied to. I added Coconut oil to my diet and my cholesterol dropped over 30 points and my ratios are all fantastic now. There is also no such thing as organic canola oil,  it is all GMO Rapeseed plant, they make mustard gas out of it. Check it out.

    “Protein pancakes” are a staple in our household, but I’ve been using a recipe that was just oats and egg whites, with a splash of rice milk for consistency. I liked this version with the cottage cheese much better: my other version produces very flat, hard, rubbery discs, whereas these ones are fuller and softer (still a tad too moist to be “fluffy” like traditional pancakes, but definitely a big improvement!). These cooked more evenly and attractively, as well. I did make one alteration: used 1 whole egg and 2 egg whites instead of two whole eggs.Can’t wait to fix these again!

    Another pancake like recipe is 1 egg white, 2 Tbsp oat bran, 2 Tbsp vanilla 0%fat Greek yogurt, pinch of cinnamon, and little bit of truvia, agave nector, or other sweetner IF desired.  These amounts only make 1 big pancake, but it’s dense and filling…and incredibly tastey!  I eat it with pureed canned peaches on top, and sometimes an additional dallup of the vanilla yogurt.  SO GOOD!

    carbs are energy. eat them :) just balance them with protein.

    Hi Zuzi,I love pancakes,so I found this recipe few months ago,I do it only from crashed oats and milk and it’s really nice!!I have to try put some cottage instead milk,sound YUMMY!!!!thanks
