Day 3 of 3 healthy treats Bodyrockers! How were your crepes and brownies? Today we're baking up some lemon bars!

Lemon Bars

Ready in 30 min - Makes 8 servings INGREDIENTS: Crust 1/3 cup oat flour 1/2 scoop vanilla whey protein 1/4 cup sweetener 2 Tbsp coconut oil 1 tsp vanilla extract 1 egg white Filling 4 eggs 1/2 cup sweetener 1/3 cup oat flour 1/2 cup fresh squeezed lemon juice 1 tsp lemon zest 1 tsp vanilla Directions: 1. Preheat oven to 350° F. 2. In a bowl, mix together all ingredients for the crust. Press mixture into the bottom of a small, lightly greased pan. 3. Bake for 10 minutes in the preheated oven or until firm and golden. 4. While crust is baking, mix the filling ingredients in a bowl. 5. Pour the filling over the baked crust. 6. Bake for another 15-20 minutes in the preheated oven until the mixture is set. The bars will firm up as they cool. After the pan has cooled, cut into bars and serve.
