30 Day Challenge: Day #7
Hi BodyRockers!
Today makes one week since starting the 30 Day BodyRock Challenge and I can certainly tell a difference.
I went to the gym as usual today and did just an hour of working out-30 minutes of cardio intervals on the treadmill and 30 minutes of Kettlebell & body weight exercises (squats, lunges, tricep dips). I plan to do a little yoga tonight to help stretch my tired muscles as I have been up since 3am today! My husband and I both could not sleep last night (due to the excitement of meeting our little one!) so I am a bit beat. Yoga and stretching always helps me to get a good night's rest.
My diet was as follows:
Breakfast: I decided to get a little creative this morning and I made a red & green bell pepper, mushroom, spinach, and onion egg-white omelette with cheddar cheese (cheese has been my biggest craving!).
Lunch: I made a beef & broccoli stir fry with brown rice. I am a fan of Chinese food, but I rather make it at home due to all of the additives that the restaurants put into their food. I also like knowing what's in my food!
Dinner: I made my favorite recipe that I would love to share with you guys: My very own Spicy Taco Soup. It is super easy to make and very filling! All you have to do is prepare the ingredients and dump them into a crockpot on low first thing in the morning so it will be ready by evening.
Spicy foods have been a HUGE pregnancy craving of mine!
Ingredients:
- 1 bag frozen corn
- 1 can pinto beans
- 1 can red beans
- 1 large can stewed tomatoes
- 1 can diced tomatoes (or Rotel)
- 1 can poblano peppers in adobo sauce (found in the Mexican foods)
- 1 can green chilies
- 1 can salsa verde (green salsa; found in the Mexican foods)
- 1 can red chili sauce
- 1 freshly cut onion
- 1 green bell pepper
- 1 packet taco seasoning
- 1 bag of frozen okra
- 1lb 98% lean ground beef or turkey
- pepper, salt, garlic powder to taste
Simply dump all ingredients into a crockpot and cook on low for 6-8 hours.
