4) The Perfect Guacamole
I have yet to meet someone who doesn’t like guacamole. It really is the perfect dish to bring to a party or serve as an appetizer. Not only is it a crowd favourite, but guac is actually good for us too! It’s totally raw which means it contains all the living enzymes and nutrients that nature intended. As well, guac is a great source of healthy fats which contrary to popular belief are not to be feared!!
Cilantro: This green herb is a potent detoxifier and is known to help remove heavy metals from the body. Some people love it and some people hate it but it’s a definite MUST in any guacamole recipe.
Hemp Seeds: They are the most nutritious seed in the world! Hemp Seeds are also a complete protein and just the right balance of essential fatty acids.
Here is how I make my Guacamole…
2 avocado, ripe and scooped out
1-2 big cloves of garlic, pressed or minced
juice of a lime
1/3 cup chopped, organic, cilantro
half a tomato, diced
Himalayan Sea Salt to taste
Hemp Seeds (mixed in or sprinkled on top)
Scoop out avocados and place everything in a bowl.
Use a potato masher to combine all ingredients.
Garnish with more cilantro and/or hemp seeds.
If you are storing the dish before serving, throw one of the avocado pits in it to prevent it from browning.
5) Magic Chocolate Pudding
This pudding is called magic because it has superpowers! So delicious, you wouldn’t even guess that its made with avocado! If you are serving more people, or just really like chocolate, you can easily double the recipe!
1 large perfectly ripe avocado
½ c unsweetened almond milk
2 T raw cacao powder
2 T pure maple syrup
½ t maca (optional)
¼ t cinnamon
Pinch of sea salt
Topping options: shredding coconut, goji berries and cacao nibs
Scoop and de-pit avocado.
Place all ingredients into a high-powered blender like a NutriBullet and blend until it’s a smooth, whipped consistency.
Add toppings and serve.
6) Broiled Banana
This has got to be the most delicious dessert that is both super healthy, quick AND easy!! I’ve been making these for a while now, but recently I was asked to bring some dessert to a healthy dinner party at a girlfriends place and this little banana won everyone over! I promise that you will LOVE it!! Mmmm…
- Buy organic bananas (as a rule).
- Cut the banana down the middle, lengthwise.
- Turn the oven on broil on high.
- Place on a baking sheet, and drizzle with a little agave or coconut nectar, cinnamon and nutmeg.
- Place in the oven face up and watch for them to start bubbling up (only takes a few minutes)
- Serve in the peel with whatever frozen dessert you would like. I use a Coconut Ice Cream (dairy-free, vegan, organic) found at Whole Foods.
- Enjoy right out of the peel!
