A HEALTHY Alternative: Blueberry Coconut Dreamsicle
We saw, we tried, and by God - WE LOVE!
Try this tasty, creamy and delicious frozen treat as an alternative to refined alternatives. Be sure to read the instructions - especially if you’ve never used coconut milk before.
Here’s what you’ll need:
1 cup blueberries
2 tablespoons liquid sweetener (coconut nectar, honey, maple syrup)
1 lemon juiced
12 oz coconut milk (full fat)
Instructions:
Refrigerate canned coconut milk for about 24 hours before you begin. This will cause the cream to rise to the top of the can. Use this for the recipe - leave the water for other recipes.
Combine the blueberries, lemon and sweetener in a medium sized bowl. Make sure you coat the berries in the mixture. Option: Some people find the coconut cream sweet enough, so if your taste (or dietary needs) dictates you can (or should) leave it out, go for it.
Put the coconut creme in a medium sized bowl, and then whip the cream until thickened. Add the blueberry mix as you whip. (If you don't want chunks of berry in your dreamsicle, you can just put everything in the blender.)
Pour this mix in popsicle molds. Place a stick in the center.
Freeze for 2-6 hours, until frozen completely. Run the mold under warm water to release the treat.
