We all know eggs are a nearly perfect little food. Nutritionally dense and packed with protein, they are a staple in many healthy diets.
But, let's face it, plain ol' eggs can get a little boring. Sure, they are good for us but sometimes you need to take things up a notch! That's where this Smoked Salmon Avocado Egg Wrap comes in!
Inspired by the BodyRock Meal Plan, this wrap is full of protein (eggs and salmon), healthy fats (avocado and coconut oil) and overflowing with flavor. Tried and tested at BodyRock HQ, we can guarantee this will become a new household favorite at breakfast, lunch, or dinner!

Smoked Salmon Avocado Egg Wrap
Ingredients:- 2 eggs
- 1 tsp coconut oil
- 1 tsp chopped coriander
- 1/2 avocado
- juice of 1/2 lemon
- 50 grams smoked salmon
- 2 tomatoes, chopped
- Whisk the eggs in a small bowl. Heat the coconut oil in a pan over low heat until melted. Add the egg and spread to a thin layer. Cook for 5 mins.
- Slice or mash the avocado. Add half of the lemon juice and all the chopped coriander.
- Spread avocado mixture on top of the cooked egg. Add the salmon.You can add the chopped tomatoes here or eat them on the side.
- Fold the egg in half. Sprinkle with remaining lemon juice and black pepper, if desired.
