Almond Coconut Encrusted Baked French Toast

Alright, in all honesty this isn’t a magical super healthy recipe. It’s not vegan or gluten free, which is what I try to push my recipes toward. BUT it’s not unhealthy, it’s basically bread and egg, with tasty toppings. Plus, since I based this recipe off of something I ate in a restaurant once, and didn’t actually have a recipe to follow, I decided to try making it baked instead of fried – so there you go, my slightly healthy twist. Ingredients:
  • 4 eggs
  • 2 tbsp milk
  • 1 tsp cinnamon
  • 4 thick slices of bread
  • ¼ cup coconut
  • ¼ cup sliced almonds
Directions:
  1. In a large bowl, whisk the eggs and milk together, stir in the cinnamon and half of the coconut and almonds.
  2. Dip the bread into the egg mixture, letting it absorb, about 30 minutes
  3. Sprinkle the remaining coconut and almonds on top of each slice and pat down firmly so that they adhere to the egg mixture.
  4. Bake at 350F for 20 minutes, flipping half way through.
frenchtoast2 Baked tastes even better if not the exact same as fried French toast. Also, lots of recipes, especially those for a French toast casserole call for the bread to be soaked much longer in the egg mixture, sometimes overnight, but I am A) impatient, and B) don’t really see a difference.
