No Bake Energy Protein Balls
1 C Dry Oatmeal
2/3 C toasted coconut flakes
** to toast coconut flakes, put shredded coconut in skillet and brown on low-med heat stirring consistently.
1/2 C Peanut butter
1/2 C Ground Flaxseed
1/2 C Chocolate Chips ( I added mini and large, large were better)
1/4 -1/2 C unsalted Dry Toasted Slivered Almonds ( I used trader Joes brand)
1/3 C Honey
1 tsp vanilla
1 TBL Protein Powder
I mixed all ingredients in a stand mixer, rolled into balls with a one inch cookie scoop. Place energy balls on a cookie sheet or in a tupperware and put in fridge!
Give it a try, these are awesome, and for your picky eaters, you wont even taste the protein powder or flax, you also wont taste the coconut. I know I have a picky eater who doesn't like coconut. Feel free to play with the recipe, add more protein or flax, you could also sub out the chocolate chips for raisins or dates! They are a great snack before or after a work out. Also a great night time dessert or breakfast on the go! To be a little health conscious about this fun snack, limit serving to 2-3 a day!
