Banana coconut pudding
Sometimes I buy bananas, and nobody in these house like to eat. They get brown allover and I´m angry about. Do you know that?
Here´s the solution of that problem!
Serves: 8
Thats what you need:
3 brown bananas
4 eggs
1 can coconut milk
5oz shredded coconut
Roast the shredded coconut in a pan. Mash the bananas with a fork. Whisk the eggs, then give coconut milk, the shredded coconut and the mashed bananas into and mix.
Fill it into muffin forms and bake it for 25 minutes at 356°F.
Enjoy it cold or warm.
You can refrigerate that.
I love it for breakfast with blueberrys.
