Banana Loaf Recipe

Straight from my naturopath’s office, one of my new prescribed breakfast options. Plus it’s delicious, so bonus for me. Ingredients: 1 c.+ mashed ripe bananas 1 c. unrefined cane sugar ¼ c. unsweetened apple sauce ½ c. organic sour cream or low-fat plain organic yogurt 2 organic eggs ¾ c. organic spelt flour or brown rice flour ¾ c. organic unbleached hard white flour 1tsp organic baking powder 1tsp baking soda ½ sea salt bananaloaf Directions:
  1. In large mixing bowl, combine banana, sugar, applesauce, yogurt, eggs, mix thoroughly. 2. In separate bowl, mix together flours, baking powder, soda and salt. Add to banana mixture, mixing just until combined.
  2. Pour into greased loaf pan or muffin tins and bake in 325F for 25 minutes or until tester inserted in center comes out clean. Cool in pan 5 min. before turning out onto rack to cool completely. Slice to serve. Add butter if desired.
