Food To Be Fit: Not-Your-Basic Protein Pan-Cake
This recipe makes two average-sized pancakes, or one gigantic not-even-normal sized pancake. I like mine with banana, blueberries and a bit of maple syrup. Test out these delicious pancakes out and let me know which fruits you like to add!

Ingredients:
- 1 scoop chocolate casein protein
- 2/3 cup egg whites + 1 yolk
- 1 heaping tbsp cottage cheese
- 1/2 cup oatmeal
- Fresh Blueberries/Banana
- 1 tsp maple syrup/nut butter
- 1 tsp cinnamon

Instructions:
- Blend protein, eggs, cottage cheese, and oatmeal in a blender or food processor.
- Heat pan on medium-low and pour mixture in. Cover for 3 minutes and place fruit & cinnamon on top. Re-cover the pan.
- Flip when you feel comfortable that the pancake will not break when moving. A pancake is ready to flip when the edges are set, and the top is not wiggling around in the pan anymore (I feel like I'm playing Russian Roulette every time I make these).
- Heat for 2 minutes on the other side. When it easily moves around in the pan, it is done.
- Plate the pancake and garnish with fresh fruit. Drizzle with maple syrup, or nut butter.
- Eat it!!! :)
