BBQ Parmesan Asparagus

Mmmm parmesan asparagus! One of our faves! Boiling the bejesus out of your vegetables drains them of their nutritive properties - this is why we love BBQ season. You can throw any vegetable on the grill for and enjoy a delicious BBQ taste as well as full nutritional value. Here is one of our favourite and fast BBQ vegetable recipes that retains all the health benefits of asparagus, including a healthy dose of vitamin K, A, C, E, fibre and folate.

You’ll need:

1 bunch of asparagus, washed. 3 tablespoons of olive oil 1 teaspoon garlic powder or fresh minced garlic ½ teaspoon salt (optional) ½ teaspoon pepper (optional) ½ cup fresh shredded parmesan cheese


Preheat the BBQ to medium-high heat. Mix the salt, pepper and cheese in a small bowl. Put it aside. Mix the olive oil and garlic in a small bowl and then brush the mixture over the asparagus. Wrap the asparagus in tinfoil and then place on the BBQ. Shut the lid. Cook for 12-15 minutes, depending how crunchy you like your spears. Turn off the BBQ. Use tongs to open the tinfoil and then sprinkle the salt, pepper and cheese over the asparagus. Shut the lid again. Leave for 3-5 minutes. Take the vegetables off the grill, let cool for a few minutes, and then enjoy!
