'Berry Easy' Overnight Oats
You've heard it all a million times: breakfast is the most important meal of the day. Well- it's true ;) If you're one of those people that struggle with breakfast because you're short on time, or even if you're looking for a different way to eat your oatmeal I have the recipe for you! This overnight oat recipe is made, as it states in the title, the night before. It's a healthy, delicious and cost-effective way for you to get that first meal in- no excuses! This is also doubles as one of my favourite snacks. Rich in fibrous carbs and a source of protein, this meal really satisfies :)
'Berry Nice' Overnight Oats
175 g non-fat Greek yogurt
1/3 cup quick oats
1 cup berries (fresh/frozen)- any (blueberries, blackberries, strawberries, raspberries)
1/2 tsp vanilla extract
Cinnamon, Splenda/stevia to taste
1/2 oz chopped almonds (optional)
1) Stir yogurt, vanilla, cinnamon, and sweetener together in a medium bowl until well blended
2) Fold in oats until well mixed; add in berries
3) Place mixture into a plastic container with an air-tight lid. Sprinkle top with optional nuts before storing.
4) Refrigerate overnight. Enjoy your pre-made morning meal!
