Black Bean Avocado Brownies
Sometimes chocolate is just a necessary part of life, as was the case this afternoon. I also had some avocado, black beans, and the last dregs of almond milk taking up space in my fridge, so why not mash it all together for some deliciousness.
Ingredients:

- 1 tbsp flaxseed
- 2 (+2) tbsp almond milk
- 1.5 cups of black beans
- ½ an avocado
- 1 tsp. vanilla
- ½ cup coconut palm sugar or cane sugar
- ½ cup cocoa powder
- ¼ tsp baking soda
- ½ tsp baking powder
- ¼ cup chocolate chips

- Blend flaxseed and 2 tbsp almond milk about 1 minute.
- Add in black beans, avocado, vanilla, and sugar and process until smooth.
- Add in cocoa, baking powder, baking soda, and remaining 2 tbsp of almond milk, process until smooth, the batter should be thick.
- Pour into a greased pan, and sprinkle chocolate chips on top.
- Bake at 350F for 20-30 minutes or until knife comes out clean.
