Black Bean Quinoa Enchilada Bake

I’m a fan of Mexican food, so I’m always looking for new recipes, when I found this one that involved the super food quinoa I just had to try it. Ingredients:
  • 3 cups cooked quinoa
  • 1 tablespoon olive oil
  • 1 small onion
  • 3 cloves garlic
  • 1 jalapeño, diced
  • 1 red pepper
  • 1 cup corn frozen kernels
  • ½ tsp lime juice
  • 1 tsp ground cumin
  • 1 tbsp chili powder
  • ¼ cup chopped cilantro
  • 3 cups (or 2 cans) black beans, drained and rinsed
  • 2 cups red enchilada sauce or tomato sauce or salsa
  • 1.5 cups grated cheese
  • Your favourite toppings

  1. Sauté the onion, garlic, and jalapeños in the olive oil. Add in peppers and corn, cook for 3-4 minutes. Add in the spices and lime juice, stirring to combine.
  2. In a large bowl, mix together the quinoa, black beans, and the sautéed vegetable mixture. Pour in the enchilada sauce and ½ of the cheese, stir to combine.
  3. Pour the entire mixture into a baking dish and top with the remaining cheese. Cover with foil and bake at 350F for 20 minutes. Remove the foil and bake for another 10 minutes. Remove and let cool, garnish with toppings.
