Blackberry Quark Crumble
It´s blackberry time. It does not mean the mobile phone ;-), I tell about the fruit. I harvested 3,5 lb blackberry in the garden. I have frozen one part, eaten some and I baked a crumble.
Now there is a little problem. In germany you get quark in every supermarket. It´s a cheap product with 75% protein in it and is almost fat free. It contains 80% casein and 20% milkprotein.
I think you have to look for meadow churn quark, curd, white cream or soft cheese.
Serves: 12
That you´ll need:
9 oz quark
1 tablespoon protein powder (you can use whey protein or pea protein)
1 half vanilla pod
2 tablespoons xylitol
9 oz blackberry
2 tablespoon shredded coconut
1 teaspoon xylitol
½ teaspoon ceylon cinnamon
9 oz virgin coconut oil

Scrape the core out of the vanilla pod. Mix it well with Quark, xylitol and protein powder.
Fill it into a small round baking form. Sprinkle the berries over it.
Heat the virgin coconut oil. Mix into shredded coconut, Ceylon cinnamon and xylitol. Let it cool for 15 minutes.
It´s allright if you can pluck the dough into crumble. Isn´t it, knead a little bit protein powder under it. Pluck little crumble and spread them all over the berries.
Bake them at 356°F for 35 minutes.
Serve it hot.
You can exchange the fruits. Try blueberries, cherries, strawberries, apple or gooseberries.
