Blueberry Oat Chocolate Chunk Cookies FOR ONE!
Hey all! I hope you're having a great week so far. I can't get over all of the awesome motivation on the Daily Hiit Blog! I am constantly inspired every time I come to the site with all things fitness, health, & recipe related!
Today I wanted to share with you a recipe that I actually don't "share" with anyone. Meaning, you are totally allowed to be selfish with this recipe & enjoy them all for yourself!
Often times I like to make a big batch of something to snack on all week long but the other night, when a cookie craving struck, I was out of luck because I didn't have any made.
I ended up creating recipe that was perfect for single serving, only took a few minutes to throw together, & a great way to get that cookie fix while still getting in your fiber, protein, carbs, & chocolate.
Because, after all, chocolate is way up there with fiber & minerals, right? Hey, life is all about balance!
Ingredients:

- 1/2 pumpkin puree (I used Libby's)
- (Could probably sub banana or applesauce)
- 1/4 Oat Flour (oats pulsed until a flour consistency)
- 1/4 Rolled Oats (not pulsed)
- 1 or 2 Squares of Chocolate of choice chopped (I used unsweetened dark chocolate)
- 1/4 cup fresh or dried Blueberries
- 1 TB Chia Seeds (or Flax)
- 2 tsp cinnamon
- 10 drops of liquid stevia (or sweetener of choice)
- 1 tsp vanilla extract
- 1/4 tsp baking powder
- Combine all of the above ingredients in a bowl.
- Place the cookie dough into globs onto a sprayed parchment lined cookie sheet
- Bake at 375 for about 14-16 minutes or until browned.
- Enjoy YOUR cookies!
