Blueberry Oat Chocolate Chunk Cookies FOR ONE!

Hey all! I hope you're having a great week so far. I can't get over all of the awesome motivation on the Daily Hiit Blog! I am constantly inspired every time I come to the site with all things fitness, health, & recipe related! Today I wanted to share with you a recipe that I actually don't "share" with anyone. Meaning, you are totally allowed to be selfish with this recipe & enjoy them all for yourself! Often times I like to make a big batch of something to snack on all week long but the other night, when a cookie craving struck, I was out of luck because I didn't have any made. I ended up creating recipe that was perfect for single serving, only took a few minutes to throw together, & a great way to get that cookie fix while still getting in your fiber, protein, carbs, & chocolate. Because, after all, chocolate is way up there with fiber & minerals, right? Hey, life is all about balance! cookies1 Ingredients:
  • 1/2 pumpkin puree (I used Libby's)
    • (Could probably sub banana or applesauce)
  • 1/4 Oat Flour (oats pulsed until a flour consistency)
  • 1/4 Rolled Oats (not pulsed)
  • 1 or 2 Squares of Chocolate of choice chopped (I used unsweetened dark chocolate)
  • 1/4 cup fresh or dried Blueberries
  • 1 TB Chia Seeds (or Flax)
  • 2 tsp cinnamon
  • 10 drops of liquid stevia (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1/4 tsp baking powder
Directions:
  • Combine all of the above ingredients in a bowl.
  • Place the cookie dough into globs onto a sprayed parchment lined cookie sheet
  • Bake at 375 for about 14-16 minutes or until browned.
  • Enjoy YOUR cookies!
This recipe could easily be multiplied to create more servings for others, or more for you! As you can see, there is no "liquid" added in because I found that the cookies worked best with just the moisture from the pumpkin puree. I hope you'll try it out & let me know how you like it.
