This dip is like a Mexican fiesta and is super easy to whip up when you have unexpected visitors. Serve straight out of the oven with organic corn chips. [caption id="attachment_96635" align="aligncenter" width="630"] Photo from: http://www.gillianb.com[/caption] Ingredients: 1.5 c black beans, soaked and cooked 1 medium tomato, diced 3 T red onion, diced 1-2 cloves garlic, diced Juice of a lime ¼ c cilantro, chopped 1 t cumin 1tsp sea salt Pinch of cayenne Preparation: Preheat oven by putting broil on low. Place all ingredients in a food processor or blender until smooth. Transfer to small Pyrex dish and place in oven. Leave under broiler for about 5-10 minutes or until top is slightly crusty and browned.
