Needed: 1-3 sweet potatoes depending on how many your feeding 1/2 tsp sea salt ( more for the top of fries before you put them in the oven) dash of cayenne pepper 1 tbl smoked paprika 1 tsp chili powder dash of nutmeg 2tsp garlic powder 3 tbl olive oil What to do: Heat oven to 415 degrees, Cover a cookie sheet with foil and coat olive oil or olive oil spray. Wash sweet potatoes, poke them with a knife or fork, then wrap in paper towel and heat in the microwave for 4-5 min. on 40% ( do not heat them on 100%) we are not trying to cook them just soften them so we can slice them. Then slice long ways and lay each piece flat and cut strips to make fry like pieces. You can also cut them the other direction, on their belly as they lay naturally and that will make more of a chip. In a big bowl, mix olive oil and spices and then add sliced sweet potato pieces. Mix well and place sweet potato fries on cookie sheet. Bake 12-14 minutes each side ( 24-28 minutes all together flipping half way through). Some fries crisp up faster ( burn really) so watch fries carefully and take out as needed.
