Carrot Cake French Toast [Recipe]
Hi all! Hope you're having a great week!
I'm back again with a new recipe that I literally have been eating....like, every morning. Don't get me wrong, I love some pancakes or waffles for breakfast - but I realized I haven't given much attention to french toast in a while!
It was like a sign whenever I came across this Cinnamon Pumpkin Millet & Flax bread at a local health food store. It's from the company called Sami's Bakery! They make great products all from natural ingredients.
Their Pumpkin Bread is amazing on it's own - but combine it with the flavors of classic french toast & some sweet carrots and you've got yourself a quick & easy power breakfast!
Ingredients:


- 2 or 3 pieces of bread of your choice!
- 1/4 cup of shredded carrots
- 2 TB Flax Meal
- 3/4 Cup Liquid Egg Whites (or 2 Eggs & 1 Egg White)
- 1/2 Cup Milk Of Choice (I used Vanilla Coconut Milk)
- Splash of Vanilla Extract
- Sprinkle of Cinnamon & All Spice
- Splash of Liquid Stevia (about 5 drops)
- Combine all of the ingredients (except the bread) in a large enough bowl to fit the piece of bread into.
- Once the wet mix is combined, place a piece of bread into the mix & let submerge until it soaks up some liquid.
- Flip to the other side & let soak for a few seconds.
- Make sure to help the shredded carrots out - you may need to "scoop" the carrots onto the bread when placing it onto the stove!
- Place piece of bread into a medium heat & sprayed pan on the stove or griddle.
- Repeat this process with the other piece(s) of bread.
- Cook for a few minutes on each side until browned & a bit crispy!
- Remove from the pan, top with any kind of topping, & ENJOY!
