Chicken and Green Grape Curry Lettuce Wrap

We combine sweet and savoury to totally delight your taste buds with this is a delicious and healthy Indian inspired snack. Feel free to adjust the recipe to account for food allergies. You can also add 3/4 cup of brown rice as well as ½ an avocado to the mix if you’d like to take your snack to 300 calorie meal. This healthy recipe serves 4 people. Even if you’re just making it for yourself, you can cover and refrigerate the remainder of the curry and use later. It still tastes delicious a day later.

You’ll need:

2 chicken breasts, cooked and diced 1/4 stalk celery, diced ¼ cup grapes, sliced 2 teaspoons cilantro, finely chopped 1/4 cup no-fat or low-fat yogurt 1 teaspoon curry powder 1 lemon, squeezed thoroughly and juice saved for use salt to taste pepper to taste 4 large and sturdy leaves of lettuce

Directions:

Combine the cooked and diced chicken breast, celery, sliced grapes and cilantro in a bowl. Combine the In another bowl, mix together the yogurt, curry powder and lemon juice. Add the contents of the bowl with the chicken and mix thoroughly. Add salt and pepper to taste. Scoop 1/4 of the mix into washed lettuce leaves, and roll the leaf up from the end. Cut the rolls in half and secure with toothpicks.
