Chickpea Bullsh*t

Admittedly I'm not the best cook. Or the most versatile. But I have a few staples that I make really well. Since both members of my household are celiac and often work long hours away from home, we've become masters of bulk cooking meals that actually taste half way decent. This is our staple. It stemmed from throwing "whatever bullsh*t" we had in the fridge + chickpeas into a wok, and has since become a bit more specific. But the name stuck. Ingredients:
  • 1C Quinoa
  • 3C Chickpeas
  • 2C Broccoli (chopped)
  • 1/2C Carrots (chopped)
  • 1/2C Red or Orange peppers (chopped)
  • 4Tbsp Olive Oil
  • Chilli Flakes
Directions: 1.  Cook your quinoa normally and set aside. 2. Heat your olive oil, chilli flakes & salt in a wok (or large frying pan) on low (2) for 10 minutes. The oil should noticeably start to take on an orange hue 3. Turn the heat up to about 4 & add your broccoli and carrots. Allow them to cook part way through. Stir frequently. 4. Turn the heat up to about 5 & add the chickpeas. Stir everything together to get the oil over all your items. Cook until chickpeas start to "pop" 5. Add in your quinoa. Mix and enjoy. Now this is generally the base. It stores well & is good hot or cold. From this, you can add whatever fresh items you have on hand (sautéed spinach, chicken, etc) or just eat it as it is. It's a great source of complete protein, but has enough carbs to actually give you energy on the go.
