Chocolate Protein Cookies

gluten-free, dairy-free, paleo, vegan, grain-free I’m not usually a cookie kind of person. A cake kind of person, definitely, but not cookies. Until recently. I have been enjoying these sometimes with my  protein powder pudding in the evenings. In line with my usual style of cooking, I like to keep it free of fruits, sugars, gluten and dairy and also quick and easy. These little bad boys will have you in and out of the kitchen enjoying your evening snack before you get caught with your hand in the cookie jar. Ingredients: 2 TB pea protein 1 TB coconut flour 2 TB almond flour 3/4 TB carob powder (add up to 1 TB if you want more chocolate flavour, or sub in cacoa if you have it on hand) 1 TB flax meal (or 1 egg white) 1/4 tsp baking soda 1/8 tsp stevia powder pinch salt 1/2 tsp cinnamon (optional) 1/4 tsp nutmeg (optional) 1/4 tsp cardamon (optional) 2 TB coconut oil 2 TB water 1/2 tsp apple cider vinegar Method: Preheat oven to 180°C, line baking tray, biscuit tray with baking paper and coconut oil. Mix all the ingredients together. It should form a dough and hold together when pressed into balls. Place ball on tray and flatten out. Put in oven and wait about 10 mins (if you are using the egg white I find it only needs about 7 mins). Take out and enjoy. Makes 5.
