Coconut Milk & Quinoa Porridge
Hi Everyone,
Quinoa is an ingredient that I’ve only started experimenting with. Altho I have an inability to pronounce it lol Quinoa is fast becoming my favourite superfood. Quinoa has many benefits – this ancient grain is one of the most protein rich foods you can eat and that it has twice as much fibre as other grains.
Like all other grains it’s fairly bland by itself but it comes to life with the addition of yummy herbs, spices and nuts in both sweet and savoury dishes.
Lately I’ve been making a variation on traditional porridge loaded with a heap of nuts, dried fruit, chia and sunflower seeds and using quinoa instead of oats. It’s proved to be quite a hit!
This is my favourite recipe for Hot Quinoa. It’s so easy to make & can be made with or without coconut milk.

Coconut Milk & Quinoa Porridge:

Serves: 2
Cooking Time: 15 minutes
What’s in it?
1 cup Quinoa, rinsed
Handful of dried fruits, I used goji berries, cranberries and sultanas
1/2 teaspoon ground cinnamon
Vanilla Pod
1 1/2 cups coconut milk
Handful of chopped nuts, I used almonds and pistachios
1 teaspoon chia seeds
1 tablespoon sunflower kernels
How You Make It?
Place quinoa, dried fruit, cinnamon, 1 cup of coconut milk and 1 cup of water in a small saucepan over high heat. Allow liquid to reduce by half and then cover with a lid and simmer until almost all liquid is absorbed and quinoa is cooked through.
Add 1/2 cup of coconut milk into saucepan, stir well and heat through the milk. Remove from heat.
Top porridge with nuts, chia seeds and sunflower kernels. Serve warm!
Tip: Be experimental, add your choice of healthy additions like seasonal fruits and berries too!
