Cookie Dough Bites
Healthy cookie dough? What is this madness? That’s right – these delectable little morsels are not only gluten-free, but they’re also packed with protein and healthy fats.
Ingredients:
1 cup cashews
1 cup pitted medjool dates
Handful of chocolate chips
Directions:
Voila – delicious raw on the go snack or mini dessert.
BONUS TIPS:
Substitute vegan chocolate chips or cocoa nibs if you like, or add in other toppings that you like such as coconut or dried fruit. Out of cashews or prefer another taste? Substituting almonds or walnuts works just as well. Also, if your food processor or blender is temperamental (like mine) try chopping up the dates a bit before adding them to the cashews to blend.


- Blend cashews thoroughly
- Add in dates and continue to blend
- Place mixture in bowl and fold in chocolate chips by hand
- Roll into tablespoon size balls, until the mixture is used up
