Cookie Dough Eggs
Keep the Easter festivities going & make these delicious and much healthier than all the store-bought chocolate, cookie dough eggs?
But MK, you already posted a cookie dough bite recipe.
A) This is an entirely different recipe
B) These are egg-shaped, and therefore more festive
C) You can never have enough healthy cookie dough alternatives
Ingredients:
Tasty and easy. Also a good way to use up leftover chickpeas. Great as a grab and go snack, or as a light dessert.

- 1 cup rolled oats
- 1/3 cup chickpeas
- 1/3 cup dates, chopped
- 1/4 cup almond butter (or any other nut butter)
- 1 tsp vanilla extract
- 1/4 cup chocolate chips
- optional: more chocolate, to melt and drizzle on eggs
- Add oats and dates to food processor, process until well combined.
- Add the rest of the ingredients except chocolate chips and process until smooth (may be a bit crumbly, but will stick together)
- Add chocolate chips and process one last time until chips are a bit broken up.
- Form mixture into egg shapes.
- Melt chocolate and drizzle the eggs with it.
