Creamy Avocado Pesto
I love pesto, but I don’t love the amount of fat you get from the cups of oil involved – and getting a creamy pesto that’s healthy? Without some kind of cream? Please, that’s basically impossible. Well, this pesto still has fat, but the lovely healthy fats that come from the superfood avocado!

You can adjust everything in the recipe to taste, add a few more cloves if you’re a garlic fiend, add some crushed red pepper for added spice, or try out a different nut.
- 1 avocado
- ½ cup fresh basil leaves
- 3 tbsp olive oil
- 2 garlic cloves
- ¼ cup pine nuts
- 2 tbsp nutritional yeast flakes (or parmesan cheese)
- dash of lemon juice
- salt & pepper to taste

- Blend everything together thoroughly and serve over your favourite pasta or as a spread.
