Cucumber Sushi Roll

I saw a picture of a zucchini sushi roll, and really liked the idea, and then I looked at the recipe and didn’t really like it, so I just made my own version! Ingredients:
  • 1 cucumber
  • 1 carrot
  • 1 avocado
  • 2 baby radishes
  • ½ a red pepper
  • 2 tbsp. hummus or spread of choice
  • Any additional veggies you want

  1. Chop the ends off of the cucumber and use a vegetable peeler to peel it into long thin strips. Cut the rest of your vegetables up into matchsticks.
  2. Brush the strips with hummus and place a few of the matchstick veggies at one end. Starting at the end with the veggies, roll up the cucumber and enjoy!
It’s basically a really convoluted way of eating veggies and dip. This is a really easy recipe that ends up looking great. I highly suggest this for any dinner party or get-together that involves appetizers. You can also customize it to your taste, adding in vegetables that you like, taking out ones you don’t, adding fresh herbs, changing the sauce, spread, or dip – really, the options are endless. I went with roasted red pepper hummus this time, but pesto would probably make for a delicious taste sensation too.   Featured image source:
