I saw a picture of a zucchini sushi roll, and really liked the idea, and then I looked at the recipe and didn’t really like it, so I just made my own version! Ingredients:
- 1 cucumber
- 1 carrot
- 1 avocado
- 2 baby radishes
- ½ a red pepper
- 2 tbsp. hummus or spread of choice
- Any additional veggies you want
- Chop the ends off of the cucumber and use a vegetable peeler to peel it into long thin strips. Cut the rest of your vegetables up into matchsticks.
- Brush the strips with hummus and place a few of the matchstick veggies at one end. Starting at the end with the veggies, roll up the cucumber and enjoy!
