Day 3 of the Lunchbox Competition
Today only raw vegetables are used. You can exchange them against your favorites. Serves 2
INGREDIENTS: 4 carrots 1 red pepper ½ cucumber 1 avocado 6 cherry tomatoes 1 tablespoon lemon juice 1 tablespoon almond oil ½ teaspoon coriander ½ teaspoon mustard (optional) 1 teaspoon chives salt pepper
INSTRUCTIONS: Cut the carrots, cucumber and red pepper in stripes. Cut the cherry tomatoes in quarters.
Slice the avocado horizontally and remove pit. Scoop out avocado from peel, put in a mixing bowl. Pour lemon juice to. Mash the avocado gently with a fork. Let it be a little chunky.
Mix it up with almond oil, cherry tomatoes, coriander, (mustard,) chives, salt & pepper.
