Day 5 of the Lunchbox Competition Vegan Indian Quinoa Curry Salad
Last day of the first round. I hope you enjoyed it. Today it´s vegan.Serves 2 INGREDIENTS: 12 tablespoons quinoa 1 tablespoon curry powder 1 tablespoon tahihi 1 spring onion 4 oz spinach 10 cherry tomatoes 4 oz broccoli INSTRUCTIONS: Rinse quinoa in the sieve with hot water. Give quinoa, 1 teaspoon salt and curry powder in a pot of boiling water. Let it cook for 5 minutes turn off the oven and let rest the quinoa for 10 minutes. Give tahini into. Cook the broccoli in a pot of boiling water for 5 minutes. Chop the spinach halve the cherry tomatoes and cut the spring onion into rings. Flavor with salt & pepper. Mix it up.
