For Egg mixture:
1 tbl non fat milk
sea salt and pepper to taste
1/4 tsp onion flakes
1/4 C chopped bell pepper color of your choice ( I like red and orange)
1/4 C chopped onion
1/4 C chopped celery
1 tsp coconut oil for cooking
** these are my basic three ingredients I like in mine, optional others to add or on a special occasion; 1/4 small chopped potato put this in first while cutting up other veggies. Ham slices, 1/4 C carrot chopped or any other veggie you like.
Other optional add ons after eggs are cooked; shredded cheese, cottage cheese, 1/2 avocado sliced
** Increase eggs and veggies based on how many feeding and to taste
Directions: In a small sauce pan on med-high heat melt a small spoonful of coconut oil, coat pan. Add veggies ( or potato first if using) sauté veggies 2-3 minutes or until onion begins to turn a little brown. Add egg mixture.
Egg Mixture is made by combining all egg mixture ingredients together and whisking with fork lightly to incorporate all ingredients with eggs.
Cook egg mixture on med-low 30 seconds to 1 minute and begin pulling away from sides and mixing with spatula or spoon. Mix often to prevent burning. Scramble is done when there is no liquid left in the pan. If adding shredded cheese, turn off burner when done then put a little shredded cheese on top and let sit for a minute before serving. Top egg scramble with avocado, salsa, or cottage cheese for a delicious and healthy breakfast.
