Easy Healthy Recipes: Crockpot Banana Bread Quinoa
Here we go again with more easy healthy recipes for all you fit fanatics:
We all want to enjoy delicious baked good without destroying our waistlines. Try this healthy and nutrient packed recipe as a breakfast alternative or pre-workout meal.
You’ll need:
- ½ - 1 banana
- 3 tablespoons maple syrup (you can use brown sugar too)
- 2 tablespoons chopped walnuts or flax seed
- 1 cup quinoa
- ½ cup canned coconut milk (you can also use light creamer and 1 ½ tablespoons of cinnamon)
- ½ cup low fat milk
- 1 cup water
- ½ - 1 tablespoon melted butter
- ½ teaspoons vanilla extract
Preparation:
Mash up the banana in a bowl and then set it aside for later. Mix the maple syrup and walnuts/flax seed together in a separate bowl. Combine the quinoa, milk, butter and vanilla in the crockpot. Add the mashed banana and stir. Make sure the banana is distributed evenly. Grab the syrup and nut/seed mixture into the crockpot and stir. Cook on low for 4-6 hours - or until the quinoa is totally cooked. You may want to add more syrup or some additional liquid to taste. Best served warm. Garnish with some banana and/or other fruit for some table appeal! Serves: 6Nutritional info:
