Lettuce Chicken & Avocado Wraps by Anne. - 1 cooled and diced seasoned grilled chicken breast (I just use a dry spice like Italian herbs). - 5 cherry tomatoes diced - 1/2 cup cucumber diced - 1/2 large avocado mashed - pepper to taste Mix all ingredients together and stuff your favorite lettuce. I used an iceberg, but butter lettuce or romaine is nice too. There you go - the perfect lunch or dinner served up in minutes.
