Flourless Coconut-Oat-Chip Bites
Recently, a cookie recipe crossed my path that used bananas as a main ingredient. I've seen a version of these now and again, but never made them until last night. I was making beef stew, and had some time to kill while that was cooking. The verdict? All 3 kids loved them, including my husband!
I changed the original recipe around a bit and included coconut and almonds, and it was a hit!
INGREDIENTS:
3 mashed bananas (ripe)
1/3 cup apple sauce
2 1/2 cups oats
1/3 cup almond milk
1 cup raisins or chocolate chips ( I used Gluten Free Extra Dark Chocolate Chips)
1/2 cup shredded coconut
1/3 cup coconut sugar
1/3 cup blanched & sliced almonds (lightly roasted in oven)
1 tsp vanilla or almond extract
1 tsp cinnamon
Preheat oven to 350 degrees. Lightly roast the almonds on the cookie sheet while preparing batter. Mix batter and add roasted almonds and form into heaping tablespoons on cookie sheet. Bake in preheated oven for 15-20 minutes. Enjoy!
