Flourless Paleo Friendly Zucchini Brownies
Whether you are gluten-free, Paleo, or neither of the above, you will find these brownies nothing less than delish! Who knew you could sneak in some healthy greens into this natural, sweet snack?
Ingredients:

- 1 cup almond butter
- 1.5 cups grated zucchini
- 1/3 cup raw honey or Grade B Maple Syrup
- 4 tbsp. cocoa powder
- 1 egg
- 1/2 cup coconut oil (or 1/3 cup applesauce if you wanna skip the oil)
- 2 tsp vanilla
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 cup dark chocolate chips
- For topping: chopped walnuts or pecans (optional)

- Preheat oven to 350 degrees
- Grate zucchini and squeeze out excess liquid from the grated zucchini.
- Combine all ingredients in a large bowl.
- Pour into a greased 9×9 pan.
- Bake 45-60 minutes or until a toothpick comes out clean -- you have to keep checking the center of the pan for the brownies to set up, so the time will depend on your oven.
- Let cool and eat.
