Food To Be Fit: Where Did She Get That Glow? Kale Salad!!

This salad is FULL of SUPERFOODS!!! With cucumber (great for your skin), grape tomatoes, red onion, raisins and goji berries (full of antioxidants), walnuts (omega-3 fatty acids), hemp seeds (protein), carrots (great for skin & eyes), avocado, red pepper, and kale (Vitamins K, C, & B6, Manganese, Fiber, Copper, Tryptophan, Calcium, Potassium, Folate, etc.), this salad is sure to get your skin glowing, and have your body full of natural, easily digestible energy!

 Salad Ingredients: DSC_0090

  • ½ large bunch of kale
  • 1 finely chopped red onion
  • ½ red bell pepper
  • ½-3/4 cup chopped carrots
  • 1 English cucumber
  • 1 avocado
  • 1 ¼ cup chopped grape tomatoes
  • ¼ cup raisins
  • ¼ cup goji berriesDSC_0119
  • ¼ cup hemp seed
  • 1/3 cup chopped walnuts
 

Instructions:

  1. Chop vegetables and mix in a large mixing bowl. Save hemp seed & chopped walnuts for garnishing the salad.
  2. Mix all ingredients for Lemon-Tahini Dressing and mix in a food processor until smooth.DSC_0120
  3. Remove the stems from kale and chop into bite sized pieces. Wash and dry kale leaves.
  4. Mix the vegetables, kale leaves, and ¾-1 cup dressing in a large bowl until fully combined.
  5. Place the salad in fridge to “marinate” for 15 minutes. Serve.
 

Lemon-Tahini Dressing:

  • ¼ cup Tahini
  • 3 garlic cloves
  • ½ cup fresh lemon juice (2 lemons)
  • 3 tbsp extra virgin olive oil
  • 1 tsp sea salt & freshly ground pepper, or to taste
  • 3 tbsp water
  • ¼ cup nutritional yeast

We want you to start your fitness journey with us as quickly as possible, that’s why we send every package to the USA via 2 day expedited shipping with our partners at FEDEX. Once your order is received and processed, it’s just 2 days to get to you once it leaves our warehouse. That’s our commitment and we stand by it.

 

We ship within Canada and the United States via FedEx with expedited 2-Day shipping.

For locations outside of the US and Canada, we ship using FedEx International, which is usually in transit for 5-7 business days, depending on location.

We ship all of our physical products with FedEx, from our warehouse location in Kingston, Ontario, Canada. Signatures are required on all orders.

Returns & Exchanges

BodyRock Equipment

We offer a 30-day return policy, as long as: it is not more than 30 days past the date of delivery; and your item is in its original condition and packaging with the original order number. Refunds will be issued when the equipment is received back to the BodyRock warehouse, minus the original cost of shipping, and the customer is responsible for the costs of return shipping. To request a refund on physical product purchases, please contact us.

Digital Products

We cannot issue refunds on digital goods such as e-books or videos, as these are non-tangible goods that are irrevocable once the order is placed.
